It’s been a while since I shared a fun cocktail with you guys. Normally, I like to do my drink posts on Saturdays, but this summer has been so crazy busy. Between work, travel, and family, most weeks I just haven’t gotten around to writing a Saturday post. I’ve had this drink photographed for a couple of weeks now, so I decided to simply go ahead and share it with you guys today!

Plus these hot August days need a good drink. And this delicious, refreshing, berry-filled, super easy margarita is the perfect after-work drink for a summer night.

After spending the last few days back in Cleveland, I was reminded that most of the country is experiencing hot and humid temperatures. I really lucked out with the weather and thankfully had three incredibly gorgeous Ohio summer days while in town. One of the things I miss most about living in Ohio are the summers. Don’t get me wrong, Colorado is obviously beautiful, but summers in Cleveland are nothing like summers in Colorado.

In Colorado, we have mid seventy, low eighty days with dry heat. Come July and August, we’ll get crazy afternoon thunderstorms too. But the nights are always cool. In Cleveland, it’s basically hot and humid from the minute you wake up until the minute you go to bed. Most people hate this kind of weather, but it’s my favorite. Very happy to have gotten a little taste of “real” summer while in town, but also still happy to be home!

Anyway, my point is that with eighty and ninety degree days, I feel like everyone can appreciate an ice-cold drink…

Which brings me to this Blackberry Thyme Margarita.

This drink was created from the contents of my fridge. I had fresh blackberries on their last leg, along with a surplus of sweet little red plums, and some fresh thyme from the garden. So I decided to be a little creative and mix it all up into a fun, summery cocktail.

What I love about mixing up drinks is that you don’t have to make them crazy complicated or fancy. They can really just be a mix-up of your favorite fruits, herbs, and fresh citrus. They can be made with or without alcohol, and adapted to your own personal taste.

Drinks are so much less of a process than any other form of cooking, so I always have a lot of fun with them.

Let’s talk details.

Whenever I’m mixing drinks, I always look for a more natural way to sweeten them to keep the drink low in sugar. A low sugar drink means healthier for our bodies, which means little to no hangover the next day. Being the fruit lover that I am, I almost always reach for fresh berries and stone fruits.

Today’s mix-up is blackberries and plums. Not only did I have these ingredients on hand, but I loved their deep, dark bluish/purple colors, and knew they would make for a pretty drink.

This margarita isn’t mixed up like a traditional margarita, but more like a bourbon smash. To easily release the juices from the fruits, I just muddled them together (aka smashed them together) until they burst. This is especially easy to do with berries and overly ripe stone fruits. I also added in a little fresh thyme from the garden to added a hint of savory flavor. Might sound weird, but promise it is good.

Usually when I make margaritas, I leave the out the orange liquor, as it’s not my personal favorite. For this marg, I did add a little orange zest because I think it pairs well with the blackberries.

For the tequila, use your favorite high quality sliver tequila. I am a fan of Casamigos.

And that’s it. Perfect for making Tuesday a little more fun, right?! Yes, yes. Right.

The Recipe

Blackberry Thyme Margarita

Fresh blackberries, sweet plums, savory thyme, and a good splash of tequila. It's sweet, refreshing, super easy, and icy cold. The perfect drink for a hot summer night!

Servings 1 makes drinks

Ingredients

  • 8 fresh blackberries
  • 1 small red plum, quartered (optional)
  • 1 tablespoon fresh thyme leaves
  • juice from 1/2 a lime
  • 1-2 tablespoons honey (if needed to sweeten)
  • 2 teaspoons orange zest
  • 2 ounces silver tequila
  • sparkling water, for topping

Instructions

  1. 1. Run a lime wedge around the rim of your glass and coat in flaky salt. 

    2. In a cocktail shaker or glass jar, add blackberries, plums, thyme, lime juice, honey (if using), and orange zest. Muddle all of the ingredients together, squashing everything to release the juices from the fruit. 

    3. Add the tequila. Fill with ice and shake until combined. Strain into your prepared glass. Top with sparkling water, if desired. Serve with fresh thyme. Drink!
