All made in one bowl, with pantry staple ingredients, super quick to mix up, healthy, and SO DELICIOUS! Yes, that pretty much sums up this mini banana bread mug cake, and it’s the perfect individual little cake to bake up this weekend. With over-ripe bananas, good honey, and your favorite chocolate bar, this is sure to become your favorite banana bread in minutes. Perfect for breakfast, as an afternoon snack, or a late-night dessert.

Look, I’m well aware that a mug cake might not be all that exciting. But you guys, please hear me out. If you’re on the healthy January trend and you still want something sweet to enjoy on a Friday night or over the weekend, this is 100% your recipe. Typically I’m all about a real deal baked dessert. I tend to avoid microwaving anything, but I make an exception for a mug cake.
The inspiration? Well, it came from a few sources. First and foremost, my go-to banana bread recipe. I made it a few years back and it’s one of the handfuls of recipes I actually make on repeat. Of course, I love all the recipes I share with you guys, but because I’m cooking and baking so many new recipes day in and day out, I rarely find the time to come back to older recipes…no matter how delicious they are.
But this banana bread is different. I make it so often and so does everyone else in the family.
My second source came from the mug cakes I shared years and years ago that I brought back to life when everything went into lockdown. I’d forgotten what a fun and easy recipe they were. It’s actually a recipe I make on occasion every now and then when I just need something warm and sweet to enjoy, but I have no time to actually bake up a cake.
And finally, my third source of inspiration? No one other than my mom. She’s all about a low sugar, healthified dessert. And she loves nothing more than an EASY peasy recipe, so mug cakes just seemed fitting. With brown bananas on the counter and my favorite banana bread recipe in the back of my head, a banana bread mug cake was the obvious choice.
So, here we are, and the verdict? Better than I’d pictured in my head. The banana within these cakes is the real secret. Wel…the banana and all those chocolate chunks. Obviously.
The quick details.
This banana bread cake comes together in five minutes tops, so the details are pretty darn quick.
Start with your wet ingredients. I like to use coconut oil for these cakes. Melt it in the microwave in a microwave-safe bowl. Once melted, add a very overripe banana and give it a good mashing with a fork. The key to any sweet banana recipe is to use bananas that are way past their prime and pretty black all over. Black bananas create the best sweet recipes due to their natural amount of sweetness.
When you have the banana all mashed up, whisk in a squeeze of honey, a single egg, and a splash of vanilla. I personally like to use honey as my sweetener as I’ve found it creates a perfectly soft, tender, and moist banana bread cake. But maple syrup works well too.
Once the wet ingredients are combined. Stir in the flour, baking soda, a pinch of cinnamon, and a pinch of salt. At this point, the cake is almost ready for “baking”.
But I have a couple of secrets.
First, chocolate chunks…and a generous helping too. The chunks are a must and create the most luscious banana mug cake. You will fold them into the batter as the final ingredient. As the cake bakes, the chocolate sinks in, melting as it sinks. It leaves you with a puddle of warm melted chocolate throughout your cake. And with every bite, a little of that melted chocolate is scooped up.
And it is delicious.
Second, instead of mixing the batter in the mug you plan to “bake” in, mix the batter up in a small bowl, then transfer to a microwave-safe mug. Yes, it’s one additional dish to dirty. However, I found this ensures that the batter is more easily mixed up and in turn bakes up nicer too.
But the real KEY to success?
Eat this mug of banana bread warm, just after cooking. This isn’t a cake you want to eat leftover, it’s meant as a quick chocolate fix. It should be eaten right away and preferably with a small pat of butter, a drizzle of honey, and a sprinkling of sea salt on top. Nothing is better.
I will say that that every microwave is different, so the cooking time is a little tricky. That said, I tested this on two different microwaves and found two minutes to be just the right amount of time. You may need to adjust slightly by fifteen seconds, give or take.

Ingredients
- 1 medium overly ripe banana, mashed (about 1/3 cup mashed)
- 1 tablespoon melted coconut oil (or butter)
- 1 tablespoon honey or maple
- 1 large egg
- 1 teaspoon vanilla extract
- 1/4 cup whole wheat pastry flour, or all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon kosher salt
- 1/4 cup semi-sweet or dark chocolate chunks
Instructions

1. In a bowl, stir together the mashed bananas, coconut oil, honey, egg, and vanilla until combined. Add the flour, baking soda, cinnamon, and salt, mix until just combined. Fold in the chocolate chunks.
2. Pour the batter into a (10-12 ounce) microwave-safe mug. Microwave on full power for 1 minute and 35 seconds to 2 minutes (I always do 1 minute 35 seconds, but it's better to under "bake"). Eat warm with a smear of butter and a drizzle of honey (you should do this!). Enjoy!
Recipe Notes
To Oven Bake: Preheat the oven to 350 degrees F. Lightly grease a 2 cup oven safe ramekin/mug or 2 muffin tins. Add the batter and bake 22-25 minutes.
Microwave: every microwave is very different, so results may vary slightly. I have a 1200 watt microwave and found 2 minutes to be the perfect cooking time. You may need to cook 1 minute 45 seconds or 2 minutes 15 seconds. Start with 2 minutes.

These were amazing! I LOVE banana bread, and that I can get a quick fix for the taste. Had never guessed I’d be able to use a microwave to get that result! I followed the recipe exactly as written, at 1:35 I checked on it and did a quick swirl of the bottom to make sure it wasnt burning, then put in for the last 25 seconds. Now that I’ve tried in my microwave I’ll just do the full 2 min next time.
Also love that unlike banana bread, these are single serve and can just make one for dessert. My boyfriend will eat the entire loaf if I make it, so this help us not overindulge in one sitting 🙂

Thank you for your creative recipes. I need to echo Emma’s comment below–some of your calorie counts seem to way off. (I say this to be helpful, and certainly not just to criticize!) Each tbsp oil contains ~120 kcal and 1/4 cup ww flour has ~110 kcal, so those 2 ingredients alone provide more than the estimated total you have here. I’d suggest double-checking to make sure the platform you’re using to calculate nutrition facts is accounting for ALL ingredients and also uses the correct number of servings. And I think this is a recurring problem on your site–I checked your recent buffalo chicken wrap recipe and also see that the calorie count is far too low (since each burrito-size tortilla provides about 200 kcal alone). I am a registered dietitian and have developed and analyzed recipes for many years, so I’m well-versed in this (and please let me know if you’d like assistance figuring this out). I think your readers would appreciate fully accurate nutritional information!

When I made this the first time, I found the texture to be quite strange and slimey (could’ve been my GF flour). The second time I added some chopped walnuts and just under 1/4 cup of rolled oats to the 1/4 cup of GF flour to give it more substance and it was DELICIOUS. Thank you!

Made this and I think the 1/4 teaspoon of salt is just way too much! Just add a pinch and taste before you add the full amount listed. Every microwave differs drastically I’ll need to try this again a few times to get the timing correct.

Egg: 72 calories
Honey: 64 calories
Dark Chocolate Morsels: 300 calories

Love it! I don’t have a microwave so I baked this in the oven and it was delicious. I think 22-25 minutes was too long for me (they might’ve burned a bit), I should’ve taken them out at around 18-20 minutes but that might just be my oven-check a little earlier if you are baking it just to be sure. I also added a sprinkle of sugar on top for a little extra crunch and sweeteness. Love how I can make this when I’m craving banana bread but don’t want to make a whole loaf, thank you for including oven instructions as well!

ok, had a banana in the fruit bowl that had been ignored for too long… 🙂 while I normally stash them in the freezer until I get a bunch for the regular b-bread recipe, not today! This is a great recipe. Made the 5 minutes chocolate chunks banana bread mug cake and I was very pleased how it turned out. It was delicious, but ended up sharing with my partner as when I did the calorie count for one cup it was much higher than the estimated 214 calories but rather about 892 calories … so enjoy this excellent recipe, but you may want to do in moderation if you are struggling with your weight ! The only modification I did was using milk chocolate, chocolate chips.

This turned out so delicious! I don’t own a microwave, so we did the oven method, and cut down the time to 15 minute because my 3 yr old wanted to make mini muffins. The whole wheat added a great almost nutty flavor, but it was still fluffy and I really liked that it didn’t just taste like banana bread. (I ended up using 1.5tsp baking powder because I didn’t have fresh baking soda, and 1/3cup flour instead of 1/4cup because I had a larger banana, and it made 12 mini muffins)

I just have to believe your program has to be missing something.

Literally just made this. Caught a sweet tooth while watching the Inauguration and this is yummy! Followed directions to a tee but used butter instead of coconut oil, all-purpose flour and maple syrup in the mix. Took 1 minute and 45 sec in the microwave. Word to the wise, do not skip the smear of butter and drizzle of honey before digging in. Quick, easy, yummy!

So yum! I tend to stress eat when I study and I’m always craving something sweet so I love these “healthier” sweet treats! I used almond flour for a substitution and added walnuts! Both worked perfectly in the recipe. Also you can definitely taste the butter if you use butter but in a good way!

The flavour is good, but the texture just didn’t work for me. Even though I used a small egg, this came out really eggy – like oversoaked french toast.
I’m going to see if I can split the egg and make two mug cakes instead. if that doesn’t work, I’ll try an egg replacement.

This was fantastic. Realized too late that I didn’t have eggs so subbed some apple sauce and couldn’t tell a difference. Split between two mugs to share with husband (we only had one ripe banana) and topped with vanilla ice cream. So easy and delicious!!

This had so much potential! I am a lover of all things HBH, so when I saw this quick and easy mug cake recipe, I jumped all over it. Unfortunately it was way too salty!! I would avoid adding the salt all together. I would also suggest adding a bit more maple sirup as I didn’t find it sweet enough (this could be due to the saltiness issue) and I don’t love overly sweet desserts, so that’s saying something. I think that with this adjustments it would be delicious and I will be trying it again soon!

This was okay for an easy snack. My husband and I both tried it and thought the salt came through too strongly. I’m also not a huge fan of chocolate in my banana bread but figured I would give it a shot. All we had was not quite 1/4 cup of mini chocolate chips. Still too much for my particular taste. We both wished the banana flavor would have come through a little more. If I make it again, I think I’ll try peanut butter chips instead and a little less salt.

Absolutely amazing! I made it gluten free and vegan by substituting with a mix of brown rice and sorghum flour and used a flax egg. I wasn’t sure if it would turn out with all of the substitutions, but it rose well and tasted delicious. Next time I make it, I plan to back down on the salt and add a little more sweetener. I made this and it was a nice quick treat! Thanks! Nice way to use up that loan banana. It has a sponge texture which was expected if you use the microwave. Funny how personal taste varies so much as I followed it exactly and while it was nice, next time I will use less vanilla as it was too sweet for me. Had no issues with the salt and microwaved for 2:30. So everyone is different.

This is one of the easiest and yummiest snacks. I love it. My only question is the validity in the calories… one banana alone is 105 calories plus an egg is 75 and then you add the coconut oil, chocolate chips and flour… that surpasses 214. Am I looking at this wrong is it meant to be shared? I eat the whole thing lol!

I made this in a mug that easily holds 14-15 oz, and it volcanoed out of the mug. Maybe my banana was too big (said no guy ever)- I didn’t measure it.
