Baked Gingerbread Custard Waffle French Toast (VIDEO).
{For the video scroll down to the recipe. It is right above.}
Oh um, hi! I have the bestest recipe to share today!
Like the BEST. Custard. Waffle French Toast. Gingerbread…ALL IN ONE.
So much to love. Thank God it’s Friday so we can all make this Baked Gingerbread Custard Waffle French Toast for breakfast this weekend. Yesss!
I’ve been dying to share this recipe with you guys for the longest time. I am so pumped the day is finally here and that I have a fun/crazy/cheery video to go along with it!
But first can we talk about serious things?
Serious things like molasses dumped all over my pantry shelves. Plus other things like Red’s Backyard.
UGH. Mice and brothers!
Yeah, mice… the mice are back. Double UGH.
So let’s start with the mice and the molasses. You know, I love molasses, I should really use it more often. Not only does it MAKE these waffles into gingerbread perfection, but it’s good for so many other recipes too. AND I believe there are many health benefits as well! What molasses is good for you?? Well maybe my little mouse figured that out too and decided he wanted to try some, because sometime in the middle of the night he tipped over a bottle causing it to leak out EVERYWHERE. Yep, this little mouse somehow managed to knock the honey onto the floor and tip over my sealed jar of molasses. Well, I guess it wasn’t really “sealed”, because it dripped down between three different shelves and made one giant mess.
My little cat, NEEDS to get on this mouse situation ASAP. Just sayin.
So yesterday, my 15-year-old brother Red, who lives the most amazing life any kid could possibly dream of, and his snowboard buddies stopped in for their four o’clock chocolate chip buttermilk waffles stop. You see, my brothers…and Blake (aka the kid who’s always around + his cat, Benny) turned the backyard into a mini snowboard park again (#redsbackyard). It’s full of rails, jumps…and a homemade, 100% hillbilly tow rope. Oh my gosh, you walk outside my front door and um, there are giant jumps, rails and a tow rope! Geez, this tow rope, it’s completely Gerard family style, but yet genius? The boys took apart the family’s 1999 Honda 50 dirt bike, took the back wheel off, added a rope and somehow manage to turn it into a homemade tow rope. And you guys? The thing like REALLY works! Red had pretty much the entire U.S Snowboard team over here on Wednesday. They rode that park all day long and then, yup, managed to stumble into my little barn and talk me into making them waffles. Red knows how to sweet talk me…as does Kai, and most of their friends. Man, these little brothers! The older brothers just can’t “sweet talk” like the younger ones can. What gives?
Unfortunately, their little “visit” caused me to miss my last thirty minutes of daylight to shoot photos?!? My sweet little Christmas treats had to wait until morning to be photographed. 🙁
I’m turning into a sucker, or maybe it’s just cause it is December and I’m feeling extra jolly. I dunno.
So anyway, those are my stories for the day. I promise no more.
Let’s talk waffles!!
Gingerbread waffles!! With eggy custard baked into them. YUMMMM! These waffles are everything, think french toast bake, but on another level. You start out by making fresh homemade gingerbread waffles. I mean, these waffles alone are crazy awesome. But then you pour an eggy vanilla custard all over them and bake them just like you would a french toast bake. It’s just kind of amazing, that’s really all I have to say.
Well, I clearly have lots to say, but you know, that’s all I should say.
This is the ULTIMATE Christmas breakfast or brunch. You can prepare it ahead of time and let the dish sit overnight in the fridge. Then, you can choose to bake as single waffles so you can stack them like I did, OR, you can just bake the waffles in a 9×13″ pan like you would a french toast casserole. Any method you choose will be delicious!!
Once the waffles come out of the oven all they need is a pat of butter, a dollop of whip cream and a generous drizzle of maple syrup.
Obviously.
And then EAT.
{THAT GIF. Doesn’t just make you feel happy inside!? 🙂 }
Hehe – got to love Christmas time!
ALSO, below is my video for this recipe. You have to watch it!! If not for the recipe than for the cuteness that is little Asher. I know I am her sister, but really, is she not the cutest thing ever? She has been wearing that outfit for the last two weeks. If you think I am dork, you haven’t seen anything yet.
You gotta watch! And then tell me what you think in the comments. KKK?? Cool! 🙂

Ingredients
- 4 eggs lightly beaten
- 1/4 cup brown sugar
- 1 cup pumpkin puree not pumpkin pie mix
- 1 1/4 cups milk
- 1/2 cup molasses
- 1 tablespoon vanilla extract
- 1 stick (1/2 cup) butter melted
- 3 cups flour
- 4 teaspoons baking powder
- 2 teaspoons cinnamon
- 1 1/2 teaspoons ginger
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- whipped cream, butter, maple syrup and fruit, for serving
Custard
- 3 whole eggs
- 3 egg yolks
- 1/2 cup granulated sugar
- 1 1/2 cups milk
- 1 1/2 cups heavy cream
- 2 teaspoons vanilla extract
- pinch of salt
Instructions
-
In a large mixing bowl, combine the eggs, brown sugar, pumpkin, milk, molasses, vanilla and butter until fully combined. Stir in the flour, baking powder, cinnamon, ginger, nutmeg and salt until just combined. It is OK if the batter is a little lumpy. Allow the batter to sit 5-10 minutes before cooking.
-
Meanwhile, make the custard. In a medium size bowl whisk the whole eggs, egg yolks and granulated sugar until the yolks are pale yellow.
-
Place the milk and cream in a large pot and place on the stove. Bring to a simmer, immediately remove from the heat and carefully pour about 1/3 cup of the hot milk into the egg mixture, whisking constantly to temper the eggs. Next, add the milk/egg mixture back into the pot of the remaining hot milk, whisking constantly. Place the pot back on the stove and stir the custard over low heat until thick enough to coat the back of a wooden spoon, about 5 minutes. Do not let the custard get too thick or you will not be able to pour it over the waffles.
-
Place a fine-mesh sieve (strainer) over a large heat proof bowl and immediately strain the custard into the bowl. Stir in the salt and vanilla.
-
Preheat your waffle iron. Cook the waffles as directed by your waffle Iron. I was able to make 9 square waffles with my batter and iron.
-
Preheat your oven to 350 degrees F. Grease a large cookie sheet with sides.
-
To make the waffle french toast as single pieces: Line the waffles in a single layer on the cookie sheet. Pour the custard over the waffles making sure the custard covers the entire surface of the waffles. At this point you can cover the waffles and store in the fridge overnight or bake as directed below.
-
To make the french toast as a Casserole: grease a 9x13 inch pyrex pan and then layer 6-8 waffles in the pan, pour the batter over over the waffles. You can now bake as directed below or cover and store in the fridge overnight.
-
For either method, bake the waffle french toast for 25-30 minutes (closer to 30 minutes for the casserole) or until the custard is just set and light golden on top.
-
Serve the waffle french toast warm with maple syrup, whipped cream and fresh fruit if desired. ENJOY!! 🙂
But I mean, really… gingerbread heaven here.
i love the idea of baking custard into a waffle; it’s like baked french toast/bread pudding waffles, which sounds like one of the best things ever. asher picking at the waffles is so cute! and i was so surprised that the baked waffles came off the pan so easily- that itself seemed magical.
Oh my heart!!! These look sooooooo decadent! And I don’t even like waffles, or french toast, but all I wanna do is stuff my face with these!! It’s the gifs, it must be… nope.

What an awesome idea ! Love this !!! I totally love waffles so ….guess who is making these 🙂 ?
Great video and have a fun weekend 🙂
This is so being made on Christmas morning! I have the very same waffle maker!
Oh my, I have to try this. I think it will be big hit.
So when I first read the title, I thought do we really need to make french toast out of a waffle? I wondered what this concoction was going to look like…. And then I saw the photos…. and thought, YES! Yes, we must make french toast out of our waffles! These look ridiculously good! Brilliant idea!
Ok, I totally need to french toast my waffles. This is happening.
Thanks Laura!
Oh Santa! I need a new waffle maker, please! These look yummy!
There is so much happening here!! I had to read the recipe twice but booooooy do I want these. I wish we were neighbours…so bad.
O.M.G. I will DEF be making these Christmas morning – they look unbelievable!!! and you have the cutest Mrs. Claus helper 🙂
Awesome recipe!!!! Love the video and your little helper is adorable!!!
Yum!! I love everything gingerbread and have never had a gingerbread waffle before- GENIUS! Your sister is adorable and keep up the good work with your videos
I don’t have a waffle machine and I never thought about baking it in the oven.
This looks good enough to try.
Hey Nancy! You can make the batter into pancakes too! Happy Holidays! 🙂
Oh thanks –that is a great idea I will try!
YUMMY!!!!! Cute video!!
This looks like the ultimate christmas breakfast! I’m so excited to give it a try.
Awww! I love it when Asher helps! Isn’t she a cute one?! And I think it’s just you being a sweet sister to make your brothers food, having nothing to do with December. ? Love the videos and the family appearances as always…keep ’em coming!
This is probably the most mouth-watering post I’ve seen this holiday season! Love those gifs! And oh dear a mouse has also made its residence in my apartment. And it’s not the brightest mouse either, it literally runs into my feet while I’m in the kitchen and I’m like EXCUSEE MEE. One day I’ll get him.
Woah! This stack! It blows all the other food stacks out of the water!
Love this creation Tieghan.
I loved the video – I wish I could be so calm when I’m cooking – I love cooking but I get all anxious about things going wrong! But it looks so much easier watching you do it than working out how from the recipe!
I loved your post and the video…..and your little sister and your kitchen and your waffle maker –
Have to make some more cinnamon sweet potato buns – but will be trying these waffles as soon as I can find a waffle machine (and pumpkin purée?) – love from Lochgoilhead, Scotland x
Awe! Thank you so much, Lindy! Happy Holidays! 🙂
I’m not a big fan of french toast since it’s usually so soggy, but I really like this idea of using waffles instead of toast. BIG fan of waffles. Their natural crispness might help off-set the sogginess of typical french toast.
I think you might love this. This is very NOT soggy french toast! Happy Holidays! 🙂
Oh my Tieghan! This waffle french toast looks amazing! Such a wonderful breakfast for the holidays! Need to try when my boys get home!
Um, as always, you’re the cutest, and these gingerbread waffle french toasts look SO FREAKING GOOD. Also that gif game though! Perfection.
They are so perfect for the season Tieghan. You come up with some delicious stuff always.
xx
The GIF is killing me. If there was smellavision, I’d be done for. Thanks so much for this totally awesome recipe. Cheers, Ardith
SHAZAM! ? You two have outdone yourselves! Food & costumes ? Asher, LOVE the Ms. Claus look- and T, what kind of outta this world creation! I am going to borrow a waffle machine from somebody (?) & give it a whirl. That GIF! Yes! And your kitchen is perfect- love every inch of it. Oh, and the cranberries were perfect ?
Merry Christmas to All ???
These just give me all the Christmas feels 🙂 Love that you used Shatto Milk! That’s the local dairy farm where I live. Cheers!
These look crazy good. Great recipe and I think I’d be more than happy to eat even the gingerbread waffles on their own. I love all things gingerbread!
I don’t even know how you come up with this stuff! Custard waffle French toast?! Amazing! Thanks Tieghan!
What a treat! Best waffle recipe nomination 🙂 Also, where did you get your waffle maker? Mine recently broke and I’m looking to buy another quality one (it lasted more than ten years; talk about a good investment!)
I LOVE Asher’s outfit; definitely bringing Christmas cheer!
THANKS!!
I have the Breville Waffle maker and think it is great! Here is the link: http://www.amazon.com/Breville-Smart-Waffle-Stainless-Steel/dp/B00F5C1QK6
Happy Holidays 🙂
These look amazing! I have been trying to find a unique gingerbread recipe, this is perfect! Thanks for sharing!
So pretty and festive, I’ve never craved French toast more! 🙂
THANKS!
Bravissima Tieghan! compliments to Mrs. Claus, so funny!
Thank you!
I have never wanted a waffle maker, till now. Asher is adorable, my youngest is her age & loves to “help” bake…he thinks c.chips makes everything better too. Would of loved a quick shot of Red’s park, the hillbilly tow rope sounds ingenious! We call it Redneckin here & I’m always proud of the inventions.
Awe! Thank you so much, Sarah! Happy 2016!
So, am I really strange for deciding to make gingerbread waffles in April? I probably am but these just looked so appealing! The waffles themselves were delicious (I also did a 2:1 AP flour and whole wheat flour ratio to sneak in some healthy)! Sadly, my mom wasn’t a fan of the French Toasting idea so I just whipped some cream cheese and greek yogurt to top the pancakes–super yum! I made four Belgian waffles and it looks like there’s enough for two more so I will try baking those for my breakfast during the week. Thanks for a tasty recipe!
No at all!!! Im glad you found them and liked them!!
Just discovered your blog and these photos and recipes look absolutely stunning! Can’t wait to read more and try out this recipe this coming holiday season. 🙂
So happy you found it Julie!! Thank you so much!!
Tieghan you are amazing – so is little Mini-Clause! Yum yum yum.
Haha, mini clause (: Thank Reni!
Hi ya! Just wanted to let you know that I made this yesterday for a tea luncheon. It was (of course, since it’s yours)…fabulous!
It reminded us of something similar we had in Edinburgh…
I went ahead and cheated (maybe that’s my superpower..) and used a gingerbread box mix , adding oil and water to make my waffles. We are still eating and drooling over them…thank you for ANOTHER awesome recipe that is now a winter tradition in this house!
Mic
Hi Michelle! I am so glad you loved this! Thank you so much!
Hi you need to adjust the butter….it sort of looks like one tbsp with an 8 after..shouldn’t it say one stick then 8 tbsp in parenthesis….if i had not seen the video i would not have realized to use one stick……(for people like me who need things so specific and nothing to figure out!! =-)
I cant wait to make them for a Christmas brunch……. thank you !! Annie
Hi Anne! So sorry for the trouble. Recipe is all fixed now. Please let me know if you have other questions. Hope you love this recipe! Happy Holiday’s ? 🙂
This is my second Christmas making your GB Waffle French toast. They really are delicious and wonderfully festive. Thank you!
Thank you so much Sherry! xTieghan
