S’more Doughnut Sandwich With Easy Homemade Beer Marshmallows

Making doughnut s’mores was honestly the whole reason why I made the Graham Crackers Doughnuts.
The minute the idea popped into my head, I knew I had to make them.I am telling you they are better than a traditional s’more.
You still get a little crunch from the crushed graham crackers on top, but then you get all the awesomeness of a doughnut combined with a s’more.
Also, it has got to be one of America’s all time favorite summer desserts.
Which makes these a necessity for any 4th of July gathering.
Obviously, they are not a must but really they are must. Ever since I made these vanilla marshmallows I am convinced that homemade marshmallows are the way to go. They just taste better and I love adding my own flavorings to them, like beer.
I did beer because well, beer and the 4th of July seem to go together like ice cream and summer. It just works.
These have also got to be the easiest marshmallows around.
Technically, these are probably not even how you properly make marshmallows, but they work and they taste good, and really, that is all that matters, right?
I say right!
I am thinking you could even do a smear of peanut butter on these and they would be awesome.
I love peanut butter and s’mores.
Oh and did I tell you guys that I have been saving this recipe for like over a month now??
I always save the the best stuff for when I think the time is right. I do it with new clothes, new food, and pretty much anything I am excited about. So I am crazy excited about these and man, I hope you are too.

S’more Doughnut Sandwich With Easy Homemade Beer Marshmallows

Ingredients
Beer Marshmallows
- 12 ounces beer
- 3 envelopes unflavored gelatin
- 2 ¼ cups sugar
- 1 tablespoon vanilla
- powder sugar for dusting
S'mores
- 4 ounce square of dark chocolate or milk chocolate 1/2 -1
- 4 beer marshmallows
- 4 in [Mini Graham Cracker Doughnuts| https://dev.halfbakedharvest.com/mini-brown-sugar-glazed-graham-cracker-doughnuts/] or other mini doughnuts sliced half
- [hot fudge sauce| https://dev.halfbakedharvest.com/giant-hot-fudge-ice-cream-sundae-cookies/] for drizzling (optional)
Instructions

Make the marshmallows. Pour beer into medium saucepan and whisk vigorously to remove some carbonation for 3 to 5 minutes. Sprinkle gelatin over top. Let stand 1 minute.

Oil a 9 x 13 baking pan and sprinkle on powdered sugar to cover and coat. Set aside.

Add sugar and vanilla. Bring to boil and cook for five minutes or until the sugar dissolves. Remove from heat and cool 10 minutes Beat on high for 15-20 minutes until stiff peaks form.

Turn marshmallow mixture into pan and let site for at least four hours or overnight. To cut run a knife along the edges of the pan and turn out onto a surface covered with powdered sugar. Cut into large squares.

To make the s'more place 1 piece of chocolate on the inside of each doughnut half and then top with 1 marshmallow.

Heat the broiler in your oven, placing the oven rack directly underneath. Broil for 1-2 minutes, until the marshmallows are golden, bubbly and runny. Remove from the oven and top with the top half of the doughnuts. If desired drizzle with hot fudge sauce. Devour!

Obviously you may also toast the marshmallows over a fire. It is my personal favorite method!
Nothing beats a doughnut s’more. Honestly.
