Single Girls Wholesome Molten Chocolate Lava Cake.
Happiest Valentine’s Day!
Who’s ready to celebrate with these lava cakes?
Ahh, me. duh.
I may be single on Valentine’s day, but you know I am totally cool with it. Single, loving life and loving the fact that I have every excuse to make these easy lava cakes today. Any of you with me or what? Did I mention not only is their warm chocolate oozing out, but peanut butter too? Because there is. And you know…the best part is possibly the fact that you really do not have to feel all that guilty about eating these. Made with all dark chocolate, whole wheat flour, an egg, and coconut sugar, these are practically one hundred percent, well, healthy…ish. 🙂
In all seriousness though, I love these cakes SO much. The fact that they can be made in just about fifteen minutes is a huge selling point. I mean, don’t you ever just crave some serious chocolate (hello, you know what I’m talking about…don’t deny it) and need to get your fix ASAP? This is your cake. Bonus that they’re pretty healthy!
OK, so let’s chat here about these sweet little single girls wholesome molten chocolate lava cakes.
What I love about these is that they are really easy to make, I used ingredients that I have on hand at all times (and I do mean at ALL times), and these are made for just one serving. So basically, they’re perfect for all us single girls out there! Or okok, anyone else who just needs a healthy..ish (<–clearly my favorite word) chocolate treat anytime, any day.
The ingredients are as follows…
…butter. I have been really into using ghee lately, which is clarified butter and a little healthier than conventional butter. That said, organic butter will do the trick, or even melted coconut oil.
…super dark chocolate. I like to use 82% dark as it has more of the superfood cacao in it.
…an egg. hello protein.
…vanilla. needed for any and all desserts. <–truth.
…coconut sugar. ahh, sweet, sweet, superfoods.
…salt. just a little to bring out those chocolate flavors
…peanut butter. or any other nut butter, but I like to use peanut butter. this is totally optional too, but you guys know I love my chocolate and peanut butter combos.
And that’s it. Simple right? Just mix everything all in one bowl. Bake for seven to ten minutes (I like to bake seven minutes for extra lava action). Then just serve with whipped cream or ice cream and EAT. You could also serve this with greek yogurt, which I think would be delish as well.
Total chocolate lava cake perfection.
So while I know what I will be doing tonight, do you guys have any big Valentine’s Day plans? Do you do it up and go out or make a romantic dinner at home? Do any of you make something fun that you can also enjoy with your kids?
Totally dying to know since I have never really been into Valentine’s Day. Sure I love the idea of chocolate and flowers galore, but ahh, why can’t we do that everyday?
Whether you love Valentine’s Day or hate it, these cakes are probably a must make for today. Single, married, not sure what the status of the relationship is, whatever your love life situation is, you need this cake.
Again, it’s oozing with chocolate and peanut butter (if you want, which I DO) and topped with whipped cream. It’s just the most perfect sweet cake that you can treat yourself to today…and then every other day after. Obviously.

I am so glad you are liking these, Ruth!! Thank you!
Hi Tieghan,
I love your recipes and your love for food !!! I’ve been off sugar but your lava cake is super tempting !!
Do you think I could replace coconut sugar with honey ? will it work ? any other healthy sweetener options ?
Hey Misha! Thanks so much! coconut sugar is actually a superfood and in small amounts good for us or so they say! I have not tried honey, but I think it would also work, but again I have not tried it. Hope you love the cakes! 🙂
Wow – what a delightful lava cake! Loving the whole wheat flour.
Thank you Shashi!
I was already hooked on these and then I read peanut butter and practically started squealing 🙂
Haha thats awesome! Thank you Laura, I hope you love these!
Currently drooling. I love how easy these are!!! Can’t wait to try 🙂

Thank you Rachael! Enjoy!!
I have no plans today as my husband is out of the country on a work trip, sooo this lava cake will mostly likely be happening after the kids are in bed. I didn’t think your photo skills could get any sharper but I was wrong; these photos are making me want to bake for ONE!! So lovely, Tieghan!
I hope you love this Julia! It will be a perfect treat for later! Thank you!
It has been a long time since I had lava cake. Yours looks delicious and it is perfect to share with my hubby. By the way, I made your Beef Bourguignon and it was delicious.
I am so happy to hear you liked the Beef Bourguignon! Thank you! And I hope you enjoy this lava cake as well!
Oh my goodness this looks like a little piece of heaven right there! Delicious!

Wow, these cakes are stunning!
Thank you Sara!!
This molten chocolate cake looks perfect for this single lady on Valentine’s Day!! I may or may not be making this…..
Haha well I hope you do & I hope you love it! Thank you Sarah!
Hooked ! Thank you very much !
Awesome! Thanks!
Incredible. I have never made lava cake before (so terrified of getting them out of the ramekins without breaking them) but when I finally work up the courage, I will make these. I made myself a trio of breakfast tacos this morning and excellent coffee in the French press, so the day is off to a grand Treat-Yo-Self start.
Wow tacos and French press?! Sounds like an awesome morning Kate! When you do make these I hope they turn out perfect for you! Thank you!!
Wow – another wonderful recipe and beautiful photos. I absolutely love your work! If I ever get to the point that I’m a tiny fraction of how talented you are, I’d consider myself a successful blogger – hey, hope springs eternal! Happy Valentines’ Day!
Happy Valentine’s Day Roberta! Your blog looks amazing, just keep doing what you love! Thank you so much!
Oh my!! Thanks so much!! The first year of blogging I was using my phone for photos, and got a Canon EOS8 a few months ago which has been very fun but of course I don’t know what I”m doing…then a couple of weeks ago found out my camera had been set so everything was overexposed by twice!! So now all is adjusted and it’s just my own talent that needs work but having a blast. Thanks so much for your inspiring words – it means so much. xoxo
Believe me I was right there with you, still not sure what I am doing sometimes! Just keep having fun with it (:
Yum! These look so good!
Thanks so much as always Kari!
Wow! This looks delish! I have to make one. Question tho: If I use semi-sweet chocolate (I don’t think I have any dark in the pantry) should I reduce the sugar and if so how much?
Hi! I don’t think you need to reduce the sugar. Maybe use 1 teaspoon, but again, i think it would be fine with 2. Let me know if you have questions. Hope you love this!
The peanut butter oozing out of the molten cake is heavenly – that photo is just killing me!!! My goodness, I love this post. This one is a keeper. Love it, thanks for sharing.
I always try my best to get a good oozing photo! Thanks Cindy!
Looks fantastic, Tieghan! I love lava cake, so delicious & easy to make!
Me too!! Thanks so much Anastasia!
I’ll take like 5 please. 😉
Haha, thanks Jennifer!
I made a lava cake for myself last night! Husband hates chocolate so he got apple crisp and I got something almost identical to this. Let’s pretend it’s Valentine’s Day again tonight so I can try your version next!
Haha, wow those both sound delicious! I think any night would work for this one!
This molten chocolate lava cake is everything! Hope you had a fabulous Valentine’s Day!
Awh thank you! Hope you had a great Valentines too!
Married guy here…and I love this cake!
Haha, too funny! Glad it appeals both ways (:
I made one of these last night and have another in the oven as I type this.
Oh, my goodness…this little gem is sooo delicious and way to easy to make.
Luck for me , I have only one Dove chocolate heart left. Otherwise I would make one of these every night! I am imagining using other little Dove chocolates…the mint, the caramel filled, the peanut butter filled.
Thanks so much for developing and sharing this recipe.
Haha, yay!! So happy you like it!! Thanks Nancy!
Lava cakes are the best, I just love these!!
Ah, so good! Thanks Laura!
Who run the world? Girls! And also this lava cake.
You got that right!!
I’m almost afraid to try this because I will like it far too much and I’ll want to make it often–I read a couple of people above have.
Is your name changing to Daily Harvest–I saw that on my email???
Hey Nancy! Nope, no name change. Just trying a work out the kinks of a new email system…it’s a little tricky, but hoping to perfect over the next couple weeks. Hope you have a great weekend 🙂
Heeee tieghan, I saw them on valentine’s and thought “oh yum”; clearly I wasn’t in my right mind.
Those treats are not just “yum” – rather holy shit freakin amazing. I’m definitely making these and probably doubling the pb amount ? A few questions; did you make this in a mug?? — genius. And do you have any idea if they can be made beforehand? Love, Eva
HI Eva! I actually made this in a ramekin in the oven. Unfortunately, I am not sure about making these in advance as the molten part will not be molten if baked before hand. Let me know if you have any questions! Thank you!
oh, this looks amazing – will try it tomorrow night 🙂
Awesome! I hope you love it Marlene!!
Brilliant recipe! I’ve made this twice now, upping the healthy factor a bit by using honey for the sweetener, einkorn flour instead of regular, and replacing the chocolate bar with frozen raspberries. Can’t go wrong!
Honey is a delicious and healthy idea! Sounds delish! Thanks so much Taylor!
I make this when my husband is out after dínnertime. Shhh, don’t tell him. It is PERFECT, Tieghan. I love it!
haha! I LOVE it! Thank you so much 🙂
Omg these look amazing. I’d like to make these for a dinner party this week but wanted to do some prep in advance. Do you think I could mix up the batter and store the prepped ramekins in advance in the refrigerator until I’m ready to bake them?
I think mixing the batter ahead and keeping in the fridge will be great. Just bring them to room temp before baking. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Did you bake the cake in a metal measuring cup?? That is such a great idea if you don’t have ramekins!
haha! I did yes!! Mine was a 1 cup measure, but 3/4 cup measure works too. Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Hi could you please tell me how many grams or tablespoons is 1 1/2 oz Chocolate. Sorry the internet is giving me different answers and I am confused. And if I want to put Nutella or biscoff spread instead of nut butter will that work fine? Sorry for the trouble!
It’s about 1 tablespoon and yes a nut butter, nutella, or biscoff will be great! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Hi so I figured out how much chocolate is 1 1/2 oz and then I quickly started to make this lava cake since it seemed so easy and quick. Since I didn’t have the big ramekin, I made two small ones, the taste was really good but my cake was of a dense texture, not crumbly like a cake. Did I do something wrong?
HI! It’s so hard to know what happened since I was not there with you, but my guess is the smaller ramekins had something to do with it. How long did you bake?
Admiring the time and effort you put into your website and detailed information you provide.
It’s nice to come across a blog every once in a while that isn’t
the same old rehashed material. Great read! I’ve saved your site and I’m including
your RSS feeds to my Google account.
Thank you so much!
I love the single girl, one-off aspect of this recipe but it looks so incredible that I want to make these for a dinner party of 12. How would you modify the recipe and would you have to adjust the bake time? Thanks so much!!
Hi Julie,
So glad you have enjoyed this recipe! If I were doing this for more than two people I would just go ahead and make a cake. Here is something you might enjoy! https://dev.halfbakedharvest.com/simple-chocolate-birthday-cake-whipped-chocolate-buttercream-video/ xTieghan
Can you make this with gluten flour?
Hey Lynn,
Yes an equal amount of Gf flour will work here. I hope you love the recipe, please let me know if you have any other questions! xTieghan
I don’t have an 8-oz ramekin. Can I split it into two smaller ramekins? How would the baking time/temp change? Thanks! Looks so tasty!
Hey Amy,
Sure I think that would work well. I would still bake for 7 minutes. I hope you love the recipe, please let me know if you have any other questions! xTieghan
