Super simple Coconut Chicken Curry. Lets call it the Monday night curry.
Oh, Monday. You came way too fast. Why does this always happen?
After last nights Superbowl feast I am betting you all want something not laden with cheese, buffalo sauce, or anything fried. Maybe, just maybe, you want something with a little green. You know for good measure.
If you can believe it, we actually had no Superbowl food. Like nothing, notta, zip, zap, zero! I know, what the?!?
Honestly, we did not even watch the game live! I know, please do not hate me.
See, I know nothing about football and the people who love it and know everything were not around. My mom and younger brother had to catch a flight to Europe (my brother is competing in the European Open for snowboarding), which meant my dad had to drive them down to Denver. So he taped the game and we watched it about two hours behind, fast forwarded through the commercials and watched just a little bit of Beyonce.
Then to top it off, we ate Curry. On Superbowl Sunday. I know. What the heck is wrong with us?
In our defense this curry is really good. It is healthy Indian comfort food and it easy and quick which is just pretty freaking awesome. It is creamy, spicy, healthy and delicious. See, Monday does not have to be all bad!

Simple Coconut Chicken Curry

Ingredients
- 2 pound boneless skinless chicken breast cut into small bite size pieces, about 1
- 1 tablespoon curry powder
- 1 tablespoon peanut oil
- 2 pieces heads broccoli separated into bit size
- 2 cloves garlic minced
- 1 teaspoon fresh ginger grated
- 1 can coconut milk (I used regular but lite works great)
- 3 tablespoons red curry paste
- ½ tablespoon cornstarch dissolved in 2 tablespoons cold water
Instructions

In a medium size pan over medium-high heat add peanut peanut oil. Toss the chicken with the curry powder and saute until cooked, about 5-8 minutes. Remove from pan and set aside.

In the same pan add more oil if needed and saute the broccoli, garlic and ginger. After a few minutes, add the coconut milk and let simmer for 5-8 minutes. The broccoli should soften but still be tender-crisp.Add the curry paste to the pan and stir it until it combines with the coconut milk. Slide back in the chicken and any juices. Bring to a slight boil and add the cornstarch. Boil for about a minute, then reduce heat and let cool slightly (about another 2 to three minutes). Sauce will thicken as the mixture cools. Watch it closely, you do not want it to get to thick!

Serve over white or brown rice.

This looks really good! I wanted to try this out, but I was wondering if the cornstarch is really necessary, because I’m on a diet where I can’t have any type of starch. I’m pretty sure all the cornstarch is for is just to thicken the sauce, but if I left that out, do you think it would be overly thin/liquidly?

I think you could leave the cornstarch out for sure! It will be a little more liquidly, nut just simmer the sauce longer until you get the thickness you want. Good luck!

I am making the curry right now. Ben and Gabe are so excited. I’ve never made anything like this before. But I have to tell you that your taquitos were a huge hit. I made them when we were out in Colorado and then again for the super bowl. Definitely a crowd favorite. I also made your Triple Chocolate Cake Balls for our Sunday dinner with the grandparents. I told them they had a secret ingredient but no even came close to guessing avocado, even after I told them it was something green. Everyone really enjoyed them and they were so different from the desserts I usually do. Thanks for the amazing recipes, it’s been fun trying new things. Tell your family hello. Hi! I made this for dinner tonight. We just got done eating and my mouth is on fire! It was delicious but a little too spicy for me. I’ve never made curry at home before but I’m assuming its the curry paste? Any suggestions on how to cut the heat? Otherwise it was delicious!

I am so glad you like it! To cute down on the heat I would reduce the curry paste to 1 tablespoon, hopefully that should be less spicy! Enjoy!
Just made this curry dish and it was great! It looked super easy and I LOVE most any kind of curry. True to form, I adapted to fit what I had in my fridge. I used cauliflower, broccoli, carrots and a bit of green pepper. Brown rice rounded the meal out. Thanks for making curry so accessible!

My taste buds forced me to add some salt ( I know, it’s bad, but don’t put the shaker on the table). I don’t know if my broccoli heads were bigger than the original, but I had way more broccoli to chicken ratio. Next time I’d add another breast of chicken. Live and learn.

I just wanted to let you know that I make this recipe at least once a month, and it’s one of my favorites. My husband likes it best when I substitute shrimp for the chicken, and in a fit of desperation, I’ve even substituted pork. I always wish there was more sauce, though, as I love the sauce! I try to always keep the ingredients on hand, as it’s an easy meal to make.

I made this curry for my family tonight and it was so good! It was really spicy though! Next time I make it, I’ll probably use a little less curry paste. Although, my husband loved the extra kick!

Hi! Yes, it can, just add everything to the crockpot, cover and cook on low for 6-8 hours or high for 4-6. Hope you love this! 🙂
I made this tonight and it was excellent! I made it as written, didn’t change anything except I used one really big chicken breast instead of two and didn’t have fresh broccoli so I had to use frozen, other then that I made it as it was written. A really good sign is when your husband says to make it again in the future. Thanks for sharing this wonderful recipe.

We made this for dinner last night, I replaced chicken with tofu and added soaked cashews for some extra textures. It’s pretty good but it tastes like something is missing. Added some salt and pepper but I think next time I’ll be experiencing with more spices to figure out what else should be added so it doesn’t taste so bland.

I know this recipe is several years old but I wanted to stop in and say it is one of the most frequently used and requested recipes in our household! My fiancé loves it. 🙂
I follow the recipe basically to the letter and serve with brown rice. Sometimes I throw in some extra chili oil for a little more kick but that’s it!
