I know, bold statement, but really…I honestly can’t think of a more summery dessert than blending two summer favorites…ice cream and s’mores, into a delicious cake?
Things I associate with summer: fresh berries, watermelon, ice cream, and s’mores. Well I guess there are a few more, but fruit, ice cream, and s’mores are at the top of my list for sure. And this ice cream cake incorporates two of those favorites, ice cream and s’mores, YES.
If you guys have been following along the last few months on the blog and on Instagram, then you know I’ve spent some time in LA hanging with my brothers and making my way to a few meetings. While I was there I had the opportunity to visit my new favorite ice cream company, Coolhaus Ice Cream. If you guys are not familiar with, Coolhaus I highly recommend checking out their site now…ok, or maybe not until after you’ve finished reading this post…and making your grocery list for this cake. Wink, wink.
Coolhaus is a LA based ice cream company that creates incredibly unique and delicious ice creams, ice cream sandwiches, and ice cream bars. My three favorite flavors: Chocolate Molten Cake, Sunday Funday, and Campfire S’more. Hello, yummmmm.
They’re available in grocery stores nationwide, and you can also order all of their ice creams online too. They’ll even deliver the very next day…dangerously amazing.



With summertime just about here, plenty of warm days ahead, and the 4th Of July only a couple of weeks away, I figured now would be a great time to share a fun new ice cream cake with you guys. Plus, I’ve basically been dying to make a s’mores ice cream cake for so long now…pretty excited not only to be making it happen, but also to have the perfect ingredients to make it!
Aside from this cake’s addictingly amazing flavors, I love the fact that it’s also incredibly easy to make. I feel as though all summer desserts should be EASY and preferably no-bake. Although, I personally don’t mind turning on my oven this time of year. Sorry, it just never gets that hot here.
Anyway, this cake starts out with a graham cracker crust, that is then filled with Coolhaus Campfire S’more Ice Cream, swirled with creamy peanut butter, topped with a layer of homemade fudge sauce, and then topped with toasted marshmallows. Totally indulgent, but totally worth it.
If you guys have never had Coolhaus Campfire S’more Ice Cream before, it’s made with their Salted Tahitian Vanilla Bean Ice Cream, then mixed with graham cracker cookie butter marshmallow swirl, and sprinkled with dark chocolate squares throughout…SOO GOOD. If you love ice cream and s’mores, you have to try this! And to make things extra delish, I added a swirl of peanut butter throughout the cake as well. The fudge topping is just an obvious must, and then the dollops of marshmallow meringue on top? Yep, another no brainer.
Originally, I was just going to top the cake with regular old marshmallows, but when I realized I was out, I decided to make meringue instead, which turned out to be so good. You can use either marshmallows or meringue, just be sure to toast them up!
Random S’more Question: how toasted do you guys like your marshmallows? I like mine pretty much burnt.



Also, since it’s Friday, and the weekend is here, I feel as though this semi indulgent cake is totally OK…yes, yes, YES! Plus, what’s a summer weekend without ice cream? You just kind of need it. Double plus, little sis, Asher, says I should have put her in the video saying how delicious the cake is because that way people will believe me when I say it’s so good. Clearly someone wants a little camera time. <–but for real, the girl loves this ice cream cake like no other.

Salty Peanut Butter S'more Ice Cream Cake.

This ice cream cake is the only ice cream cake you will ever need!
Ingredients
- 9 graham cracker sheets, crushed into fine crumbs
- 1 stick salted butter, melted
- 3 pints Coolhaus Campfire S'more Ice Cream, softened
- 1 cup creamy peanut butter
- 1/2 cup sweetened condensed milk
- 3/4 cup semi-sweet chocolate chips
- 1 cup marshmallows or meringue
- flakey sea salt, for topping (optional)
Instructions

1. Lightly grease an 8-9 inch springform pan.
2. In a small bowl, combine the graham cracker crumbs and butter and mix until combined. Dump the mixture out into the prepared pan and use your hands to press the crumbs into the bottom of the pan until you have a smooth, even crust.
3. Add the ice cream and peanut butter to a large mixing bowl. Using a spatula, mix the ice cream and peanut together until the peanut butter is swirled throughout the ice cream. Spoon the ice cream right on top of the crust and smooth it out into an even layer. Cover the cake with plastic wrap, pressing the wrap against the ice cream to help prevent ice from forming. Freeze for 4-6 hours or overnight.
4. To make the fudge sauce. In a microwave safe bowl, microwave the sweetened condensed milk until warm to touch, stirring every 30 seconds. Stir un the chocolate chips until melted and smooth. Remove the plastic wrap and drizzle the fudge sauce over the ice cream cake. Return to the freeze for another 30 minutes.
5. When ready to serve, top the cake with marshmallows or dollop with meringue. Using a blow torch, toast the marshmallow. Slice and serve immediately.

i definitely like my marshmallows on the burnt side (then they get crispy and i’m too impatient for perfectly golden ones anyways), but these toasted ones are much more aesthetic (; and the graham cracker crust sounds like the perfect way to infuse that signature graham crunch into this dessert!!

Any tips on how to toast marshamallows, if you don’t have a kitchen torch. Do you think you could bake on a try in the oven under the broiler and then move them over to the cake?
Hey Breah! Do you have a gas burner? If so you can toast the marshmallows over the burner and then add them to the cake. If you dont have a gas burner, put the marshmallows on a greased sheet pan and place under the broiler for 2-3 minutes or until toasted and then add them to the cake. Hope that helps!
