Putting a festive spin on a classic Moscow Mule with this bubbly Pomegranate Champagne Mule. Fresh winter citrus, pomegranate juice, double the ginger, and a good splash of vodka. Then, top it off with ginger beer, bubbly champagne, and sweet sugared rosemary. This drink is so easy to create, simply mix everything together for a festive holiday cocktail that’s perfectly sweetened, and so delicious! This drink can be made ahead of time for easy holiday entertaining. Tip? Make the punch variation to serve to family and friends! Everyone loves a champagne Mule!
Happy Christmas Drink Saturday! I’m overly excited today. For one, I adore this cocktail and have been envisioning it ever since I thought it up months ago. And two, it’s Thanksgiving night as I’m typing this, the snow is falling outside my window, and I’m more grateful than ever for all of you. Wow, this Thanksgiving was one for the books. We’ve never seen so many HBH recipes made in one day.
I’m in awe and feeling so well-loved by this HBH family we’ve built. I love my family more than anything…but my HBH is family is right up there with them. Just needed to say a big thank you to you guys. You guys all killed it with your cooking and baking…and cocktail making this year!! ‘
Alight, onto today’s drink! This champagne mule is one I’ve been dreaming up for a long while. It all started with these gorgeous copper mugs I found. To me, they had a Christmas cocktail written all over them. At first, I wasn’t sure what drink I wanted to create with these mugs, but then, about a month ago, this pomegranate champagne mule came to mind…
And then, slowly over the course of November, it developed into everything you see. And you know? It might just end up my favorite of the season.
Here are the quick and simple details.
This is such a simple drink. First, gather your ingredients. Fresh limes, grapefruit, pomegranate juice, rosemary, ginger, a little bit of vodka, ginger beer, and of course, champagne (sparkling wine works too).
Find yourself a cocktail shaker or even just a mason jar. Add everything in except the ginger beer and champagne, and then shake, shake, shake.
At this point, strain the drink into your glass and top it off with ginger beer, then champagne.
SIMPLE, but GOOD.
You can also make this into more of a punch for serving guests. If doing so, I would probably recommend doubling the recipe, depending on how many people you plan to serve…or if you just know your crowd will be going back for seconds.
Make the drink extra pretty…
Candied rosemary…my favorite cocktail garnish to add to drinks this time of year. It’s delicious and so pretty. I love the way it sparkles like snow!
And the best part? It’s so simple to make. Just grab some fresh rosemary sprigs, dampen them with water, and cover them in granulated sugar. Let the rosemary dry for an hour at room temperature. Now you have pretty, glistening rosemary that’s the perfect final touch to this bourbon sour.
And you guys? That’s kind of it for this drink. It’s not a classic Mule, but it sure is fun. And that addition of bubbly champagne makes it even better than the original. I know this will be on repeat at my house when family arrives for Christmas. They love a good Moscow Mule, but add pomegranate, double the ginger, and champagne into the mix?
Everything they’d ever want out of a holiday cocktail.

Pomegranate Champagne Mule

Ingredients
- 1/3 cup pomegranate juice
- juice from half of a lime
- juice from 1/4 of a small grapefruit, plus grapefruit slices for serving
- 1 1/2 ounces vodka
- 1 teaspoon fresh grated ginger (optional)
- 2 ounces ginger beer chilled
- champagne, chilled, for topping
- pomegranate arils and sugared rosemary, for serving
Instructions

1. In a cocktail shaker or glass jar, combine pomegranate juice, lime juice, grapefruit juice, vodka, and ginger. Fill with ice and shake 1 minute to infuse the drink.
2. Strain into a Moscow Mule mug, champagne, or wine glass filled with ice. Add the ginger beer and top with the champagne. Serve with sugared rosemary, a grapefruit wedge, and pomegranate arils. Drink and enjoy!
Sugared Rosemary

Line a baking sheet with parchment paper. Gently run rosemary sprigs under a little water to dampen and place on the prepared baking sheet. Sprinkle the rosemary with granulated sugar on all sides, making sure the rosemary is thoroughly coated in sugar. Allow to dry on the baking sheet for 1 hour. The rosemary can be made 1 day in advance and stored at room temperature.

- juice of 2 limes (about 1/2 cup)
- juice of 1 small grapefruit (about 1/2 cup)
- 1 1/2 cups (12 ounces) vodka
- 1-2 tablespoons grated ginger (optional)
- 2 (8 ounce) cans ginger beers chilled
- 1 (750ml) bottle champagne, chilled
- pomegranate arils and sugared rosemary, for serving
Instructions

1. In a pitcher, combine pomegranate juice, lime juice, grapefruit juice, vodka, and ginger. Stir to combine. Chill until ready to serve, at least 1 hour.
2. Pour into Moscow Mule mugs, champagne, or wine glasses with ice. To each drink, add the ginger beer and top with the champagne. Serve with sugared rosemary, a grapefruit wedge, and pomegranate arils. Drink and enjoy!
