Chocolate Coconut Latte Fudge Popsicles.
Is there anything better on a hot day than homemade chocolate fudge popsicles? I don’t think so, and these easy pops are made with only real food ingredients, no processed or added sugars. And of course, they are completely delicious, extra chocolatey, and so creamy.

Welcome to Friday! Is anyone else super excited that the weekend is here? It was a week of ups and downs for me, so I am excited to chill tonight and hopefully turn my brain off for a minute. Question, how do you guys like to relax after a stressful work week? Would love to hear your favorite things to do on Friday nights to unwind. Are you more of a need to get out person or a homebody?
Personally, I am such a homebody. I love staying in and curling up on the couch with a bowl of Friday night pasta in hand (recipe is in the book). Of course, I haven’t actually done this in ages, but my goal is to do that tonight!
As for Saturday and Sunday, no real plans yet, but that just makes for the best weekend, right?

OKAY. Let’s talk about these popsicles.
As if it wasn’t clear from all of the grilling recipes I posted this week, I am really ready for the summer weather. I get the feeling most people are, as it’s that time of year when everyone just craves a day full of sunshine and hot temps, maybe glass of summer Rosé, and popsicles!
Always popsicles
I just love popsicles. Who doesn’t? There’s something so fun about them, and chocolate fudge popsicles always remind me of being a kid and reaching for them after coming inside from the heat. Looking back, my mom would always buy those processed fudge popsicles that tasted more like ice.
These are better. Much, much, better. And not full of any weird, unknown artificial ingredients either.
They’re actually kind of healthy. Yes, please!

Here’s the story. Lately I’ve been having a hard time with sweet recipes. I keep going back and forth on whether or not I should be sharing healthier items or have fun and go all out. Sometimes it’s ok to indulge in a really good chocolate dessert and sometimes you need something chocolatey, but just not a sugar filled slice of cake. You know?
My thought process is, with summer drawing near, a lot of you might be looking for something healthier to satisfy your sweet tooth cravings, but of course, still delicious.

Enter these latte popsicles that are honestly just the most delicious, creamy, chocolate popsicle ever. Definitely a new favorite.
The base of the popsicle is pretty simple, raw cashews, coconut milk, and dates. The combination of these three ingredients create a popsicles that is creamy, smooth, and sweet, but without using any kind of added sugars. LOVE this.
To flavor the popsicles, I really wanted to use coffee and go for a latte kind of taste (because I love coffee and I especially love coffee and chocolate together). So in went a little black coffee along with some vanilla, because cashews, coconut, coffee, and vanilla make for one delicious latte popsicle.
And then?
The chocolate. Yes, you know I had to dip each popsicle in a little melted chocolate and it’s just about as heavenly as it sounds.

I really cannot begin to describe just how good these are.
Each bite it a mix of creaminess and crunch with hints of coffee, cashews, coconut, and vanilla. I know that sounds like a lot, but all the flavors just pair so well together. You really can’t beat these. You just can’t.
These need to be on your list to make soon. Like this weekend, or maybe for Memorial Day weekend…and then every other weekend after. Clearly I’m really hoping that these pops will become a summer staple for you all!

Hoping to end my Friday night with a side of these popsicles, because I have two bags full in my freezer and they have my name written all over them. Already very excited. Best part? I don’t have to feel even the least bit guilty about eating these because they are vegan, gluten free, and full of healthy fats, protein, and plenty of antioxidants from those dates.
Does this mean we can just snack on these all day then you think? Hmmm…
Bring on that summer heat please!

If you make these chocolate fudge popsicle and love them, please be sure to leave a comment and/or give this recipe a rating! I love hearing from you guys and always do my best to respond to each and every one of you. Oh, and of course, if you do make these popsicles, don’t forget to also tag me on Instagram so I can see! Looking through the photos of recipes you all have made is my favorite!

Is there anything better on a hot day than homemade chocolate fudge popsicles? I don't think so, and these easy pops are made with only real food ingredients, no processed or added sugars. And of course, they are completely delicious, extra chocolatey, and so creamy.
Ingredients
- 1 cup raw cashews
- 1 1/2 cups full fat canned coconut milk
- 1/2 cup pitted medjool dates
- 2 teaspoons vanilla extract
- 1 pinch flaky sea salt
- 6 tablespoons brewed coffee
- 8 ounces dark chocolate, melted
Instructions
-
1. Bring a small pot of water to a boil. Add the cashews and let sit 15 minutes or up to 2 hours. Drain.
2. In a high power blender or food processor, combine the cashews, coconut milk, dates, vanilla, pinch of salt and 2 tablespoons coffee. Blend until completely smooth and the consistency of a thick smoothie.
3. Evenly divide the remaining coffee among 7-8 popsicle molds. Spoon the cashew mix over the coffee, it should naturally create a swirl of coffee. Insert popsicle sticks, cover the tops of the mold, and freeze until firm, about 4 hours. To remove the popsicles run the mold under hot water for 10 seconds and then pull the popsicles out of the molds.
4. Dip each popsicle in chocolate. Store in the freezer.

You see? So CREAMY. I love them!

Looks good. I am more into dessert, dessert. I guess go sweet or go home! Not really, but just seem like a lot of dates lately. In the end, they all break down into sugar.
Hi Joyce! Yes, I have been using a lot of dates because it is a natural sweetener. Your body is able to use it for energy and nutrients, unlike normal processed sugars. I hope you understand. Thank you!

What purpose do the dates serve? Can I leave them out?
Hi Mel! The dates are used to sweeten the popsicles and they also help bind everything together! I would not suggest leaving them out! I hope you love these!
Psh, people, the internet has both healthy AND indulgent things all over it. I appreciate blogs that have a variety like this.
If you don’t like dates/can’t have them, you could swap out another sweetener ingredient-Sugar (I’d probably make a simple syrup with a touch of cinnamon in it, personally), honey, maple syrup, agave, just play with the amounts til you get something you like. It’s not hard.
Hi Jami! Yes, you can swap out the dates for other sweeteners or sugars! I hope you love this recipe! Thanks for the comment!
These look amazing! Love that they’re made without processed sugar. Have a great weekend.
Thank you Molly!!

What is the best way to store them after dipping them in chocolate? I don’t want to throw them all in one big gallon bag in case the sticks get sticky!
Thanks!
I LIke to keep the pops in the freezer after dipping, they store beautifully this way! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
Not sure why everyone is so down on the dates. I love date recipes! There are tons of other dessert recipes on your blog. Or people can just use sugar instead if they really want, not that hard
Thank you Emily! So glad you like this!
Gorgeous pops, these look so delicious!
Thank you Laura!
I agree..
?
wonderful, thank you for this recipe, great alternative-sweetened popsicle and fun desert too
Yes! So glad you like this Sabrina!
Hi Tieghan,
This recipe is simply fabulous. I’m not sure why everyone’s so down on the dates. As someone else mentioned, you can literally choose to sweeten this with whatever the heck you want! I made the recipe as-is and I couldn’t believe how rich and creamy it turned out. It’s not that sweet.. I could’ve added more dates if I wanted! But I prefer things a bit less sweet since these are already so indulgent. I added cinnamon and espresso powder to my chocolate drizzle mixture and it’s just divine.
These just made my whole day! I’ve been patiently waiting to make them all week. haha For all of your Canadian fans, Costco started selling these molds IN-STORE for under $10 CDN: https://www.amazon.ca/Zoku-ZK132-Mod-Pops/dp/B01DF3U0SA and I have to say, I’m really happy with them so far! (Just sharing in case this is helpful to anyone)
Also, I just ordered your book (I’m a long time fan) and it’s amazing. You should be very proud!! It’s a stunning representation of you and your many talents. You rock girl.. I love your recipes so much!
Thank you so much Becca! I am so glad you enjoyed these popsicles and I hope you LOVE the recipes in the book! Let me know what you try! ?
These are delicious.
Thank you Lisa!
Thanks for offering a recipe that is healthier for the kids. With summer approaching Home made popsicles is a must for us and the healthier ( with taste) the better!!
Also, What does flakey salt mean?
Hi Jodie! I am so glad you like this and I hope your kids love it! By flakey salt I just mean flakier sea salt. I usually get Maldon’s Flakey Sea Salt?
Can I use something other than cashew? My brother is highly allergic, but he would love these!
Sure! You can use any nut you wish. Almonds, sunflower seeds, and peanuts would be great! Please let me know if you have other questions. Hope you love this recipe! Thanks! 🙂
The date haters are blowing my mind! Ha. Dates are one of the greatest food gifts on our planet if you ask me, I use them in SO many recipes! Can’t wait to try these next. xo.
I am so glad you like them! Thank you Elise!
These look SO yummy! I love the chocolate and coconut combination. Coffee probably would taste good too, though I’m not a big coffee fan. And I love that the ingredients are super healthy!
Thank you so much Cassie!
thank you describing about the fudge popsicle…
Glad you enjoyed this post! I hope you try this!
I have been looking forward to making these and I finally did today. The first problem I encountered was that I used my small food processor..(don’t know what I was thinking) I switched to the big one and for some reason it was spraying all over so I moved to my blender. That worked. The flavor is good. I love dates so that works for me and dark chocolate..always. I was disappointed in the texture. Is it supposed to be a bit grainy or did I not blend long enough? Thanks. Love your recipes.
Hi Rebecca! I am glad the blender finally worked for you! It is supposed to be smooth, so it may not have been blended enough! Thank you for trying this! xTieghan
