Dark Chocolate Avocado Mousse with Coconut Caramelized Bananas.
Can I just say, thank God it is Tuesday.
Because Monday was just not fun.
And that is putting it nicely.
If you read a lot of blogs, you may think that us bloggers (ugh I really hate that word) have it all together. Trust me, I feel the same way reading some of my favorite blogs. Like how in the world do they do it all and still have their nails painted a perfect shade of turquoise blue?
Well, I am most definitely not one of those bloggers and today is the story of how I most definitely do not have it all together.
From the pictures you see everything may look all put together and pretty, but about a centimeter outside my lens it is total chaos.
And yesterday was just one of those days when not one thing wanted to go right. Normally I try not to be such a downer, but since I am on this new kick of getting all personal I feel like I should share the bad with the good. Just like everyone else, I have super bad days too. Today was one of those really hard days where all you want to do it just give up and cry for a good five minutes.
Yep, that was me yesterday… a few times.
To be honest, I really just needed a good cry. Sometimes it is the only thing that will actually make things better. Sounds weird I know, but that’s the way it seems to work with me.
Also, sometimes a girl just needs a hug from her mom. No matter how big or little, or how young or old. On a bad day a mom’s hug can make things a million times better in the matter of seconds.
If you do not believe me, just give it a try on your next “oh my gosh will this day please just end”. You will see, it really helps. If not your mom, then a spouse or loved one. Hugs help!
And so does chocolate mousse.
Especially when it is avocado mousse and full of good things for my brain, that apparently needs good brain food to get out of the crazy person state and back to a normal person state. Errr, who am I kidding. I will always have a crazy person’s brain, just sometimes it is a bit more intense than others.
So yeah, yesterday was terrible and I am the first one to admit that I am nowhere near the perfect blogger. Most of the day our kitchen (and surrounding area) pretty much looks like a five-year old had free rein in it for twenty-four hours and yes, I did totally break my camera yesterday (yes, I did), but today I am just going to forget about yesterday.
And talk about avocado mousse and coconut caramelized bananas.
Because these two things together are really good.
Good for the brain… and for your sanity.
This mousse comes together in minutes. Really just minutes. Everything goes into the food processor and is whipped into creamy, silky perfection. If you have never had avocado mousse (or pudding or whatever you want to call it), do not be afraid, I promise you it is a good thing – and it is good for your hips too.
And the bananas just add to the deliciousness.
Ok, really I only added the bananas because it is freezing pretty much everywhere in the Northern Hemisphere right now and I want something hot and gooey to go with my cold mouse.
It was the best decision I made yesterday… for sure.
The mousse is the silkiest around. Honestly, I still cannot get over how incredible it tasted and how simple and easy it is. It is a tad heavier than regular mousse, but I don’t know, these days I am really loving it more the real stuff. The avocados just make it so smooth and creamy. And I promise, you will barely know they are in there.
Plus, what could not be good with chocolate added to it?

This mousse comes together in minutes. Really just minutes. Everything goes into the food processor and is whipped into creamy, silky perfection. If you have never had avocado mousse (or pudding or whatever you want to call it), do not be afraid, I promise you it is a good thing - and it is good for your hips too.
Ingredients
Mousse
- 4 large + very ripe avocados peeled and pitted
- 4 ounces dark chocolate melted and lightly cooled
- 1/4 cup dark cocoa powder I used Hershey's Special Dark
- 4 tablespoons honey
- 1 tablespoon vanilla extract
- 1/2 teaspoon salt
- 1 tablespoon instant coffee
- 1/3 cup canned coconut milk (l used regular but lite works fine too)
Coconut Caramelized Banana
- 4 ripe bananas preferably ones that are still a little firm, sliced into rounds
- 2 tablespoons coconut oil
- 2 tablespoons brown sugar
- 1/4 cup coconut rum
- 1 tablespoon vanilla extract
- 2 tablespoon unsweetened toasted, or sweetened coconut
Instructions
-
Add the chocolate to a microwave safe bowl and microwave on 30 second intervals until melted and smooth, about 1 minutes. Set aside to cool slightly.
-
Add the avocados, melted chocolate, dark cocoa powder, honey and salt to the bowl of a food processor. Take the instant coffee and using your fingers grind it together to make a fine powder. Add the instant coffee powder to the bowl. Blend until smooth and creamy, scraping the sides of the bowl as needed. Add the coconut milk and blend again until smooth and creamy. Spoon into glasses and refrigerate for at least 1 hour, but preferably 3 to 4. The mousse can be prepared 1 day in advance.
-
When ready to serve the mousse melt 2 tablespoons coconut oil in a skillet. Add 4 sliced bananas and 2 tablespoons brown sugar. Cook 2 minutes on each side or until browned. Add the coconut liqueur and vanilla; simmer 1 minute. Remove from the heat and spoon the warm bananas over the mousse. Sprinkle with toasted coconut and serve!
Wait, forget I just said that… just give the mousse a try, you’ll be happy you did.
Ugh your day sounds awful. So sorry it was bad. Nothing ‘bad’ happened to me, but I agree, Monday sucked. The whole world was back at work and everyone wanted or needed something or wanted to email! It was never ending.
Your mousse is gorg. The second ever blog post I wrote was raw vegan choc avo mousse, summer 2009. Almost 5 yrs ago. The photography, well, let’s just say I won’t be providing a link 🙂 I did however also include a Pb-Choc avo mousse in my cookbook. The photography was better 🙂 I love using avo in raw/vegan desserts. Can’t beat it! pinned
Mondays in general are just not fun. 🙁
Wow, 5 years! So crazy how far you have come. I mean, it is incredible!!! I know I say this a lot, but you amaze me everyday. Such and inspiration!! Thanks!
And I have to try the PB Mousse!!
This sounds amazing. I’m sorry you had such a rough day. I felt the same pain when I broke a lens. Your heart just sinks. A good cry and a hug always help.
Thanks Norma!!
And yes, breaking camera stuff is the WORST feeling. Ugh.
Sorry to hear about your day, hopefully today will be better! This looks amazing and I love avacado! Never thought to put it into a mousse.
Kathy, you have to try avocados in sweets. They make things incredibly creamy!!1
Thanks!
So sorry to hear about your day girl! My kitchen looks the same way. I am a terribly messy cook!
But this avocado mousse?! YUM! I love making avocado mousse but you just took it to a whole new level with coconut and caramelized bananas! Plus, there is rum.
You win.
Thanks Taylor!!
I am such a messy cook. I need to get it together.
So sorry that you had such a bad day yesterday! I totally know what you mean–sometimes a good cry is the only thing that can help. Hope you (and your camera!) feel better today!!
I have yet to make a chocolate avocado mousse–really need to get on that already. Love the caramelized bananas on top!
Thanks Laura! The camera is going crazy. Ugh. I have to send it out to Canon. Bummer.
You would love avocado mousse. It always surprises me how good it is!
ps. LOVE the soup today. Thai is my favorite!
I hear you on needing a good cry. For some reason, it does make me feel better. And you are so right, avocado mousse DOES make things better! I haven’t had it in so long, and definitely not with caramelized bananas. Does this count as breakfast food? I have a feeling today is going to need some avo mousse 🙂 I hope you have a great day, Tieghan! You are fantastic cook and (I’m sorry;) blogger (what else do I say?:) Pinned!
I put it under the breakfast category of my recipe page, so yes! 🙂
Thanks Mary! 🙂
Girl, I’m totally with you, and sometimes a good cry is ALL you need….and a pint of strawberry haagen dazs….and something chocolate…like this! I love the caramelized bananas so much, and this looks perfect. Sending hugs your way!! xx
🙂
Thanks Katrina!!
LastSaturday was my bad day! I cried a couple of times 🙁 Glad I am not the only one! The mousse is beautiful and I am sure it would make anyone feel better!
Thanks Liz!! Hope you days have gotten better since Saturday!

Happy Valley Chow
Thanks so much!
All my favorite things in one little package! YAY!
And I’m with you … we need to come up with a better word than “blogger.” It kinda sounds like throw up.
I’m worried about your camera, girl. xoxo
Haha! It does kind of sound like throw up. Eew.
And my camera. Ugh. I am worried about it too!! Sending out to Canon. 🙁
TGIT! Come over here and lay your head on my shoulder, girl. You let those tears flow! Remember, you are an amazing woman and you’re doing your best, which is AMAZING!! You’re very talented, and smart, and sometimes crap happens. Sometimes we break cameras (UGH sorry!!!!), and sometimes our recipes blow. But we bounce back, and without those downer days, our upper days would be bleh. So chin up, my dear! I’m sending you a huge hug. Let’s eat avocado chocolate mousse. You freaking genius. 🙂
Haha! Thanks Julia!!
And really, congrats to you!! SO much exciting stuff happening in your world right now!
I’m a firm believer in the powers of a good cry. And a BIG hug to make it better. 🙂 Hope Tuesday is going better Tiegs! Let’s share some mousse. Deal? 🙂
Thanks Megan! It is a deal for sure!
This looks so good! I love avocados, and the chocolate mousse treatment is a big yes. Regarding having it all together…I’m with you. I hope your Tuesday is looking brighter.
Thanks so much, Shaina! 🙂
Mondays (blah!!) but on a good note this recipe looks amazing! =) yum!!!!
Thank you!
HUGS!!!
I hope Tuesday is working out better for you. You’re such a baller for still publishing a post (let alone one of this quality) amidst all the chaos. We’re all behind you!
p.s. best banana shot EVER!
Thank you so much, Todd!! Glad you like the bananas! 🙂
I honestly loved reading this post because I’ve totally felt like that before. Actually for me it was Sunday; I was just feeling so overwhelmed and like I couldn’t do anything right… and sometimes crying just helps you let go of it all. : /
You should know that you’re one of those bloggers who I always look at and say, “How does she DO all of that every day?” You’re like some sort of cooking-baking-blogging superhero in my eyes!
HAha! Oh my gosh, I cannot believe you think that. LOL! So crazy!!
Yes, crying really does help you let it go. Honestly it just feels good. 🙂 Thanks Alexandra and you should know that you are KILLING it!! I am loving every recipe and photo you post. Hang in there and keep the sweet food coming!
Every time I see a recipe by you I’m always impressed Teighan. And this recipe is no exception. Love that you made the mouse with coconut and avocado then topped it with that caramelized banana goodness! Great healthy dessert to start off the new year. Pinning!
Wow, thank you so much!!! Made my day! 🙂
So sorry you had bad day! It’s never fun to feel out of sorts. Hopefully this gorgeous mousse cheered you up a bit, and hopefully today is a better day. 🙂
Thank you so much, Nicole!! The mousse helps! 🙂
I’m with ya, sista — the past few days I have been just riddled with crippling anxiety and am just walking around like a ticking sobbing timebomb! Moms always know when to give the best hugs and let us cry it all out. Your mama sounds awesome 🙂
Aaaaaand btw, so does this mousse. I mean, are you forreal?!
Thanks Hayley! Moms are honestly the best and obviously, I think mine rules! 🙂
I am skeptical and I have seen something like this before, but I think I REALLY need to try it!
Oh man, just try it! Promise you will be amazed!!
I love the sound of this, Tiegan!
Thank you, Jen!!
I am so sorry to hear your Monday was rough. It must just be that time of year because everyone was testy here too. Although being stuck inside might have something to do with that! That chocolate mousse with avocados sounds amazing! And caramelized bananas…yes, please! This is seriously amazing looking!!!
Thanks Jocelyn! Hope you guys stay warm!
Sorry to hear about your bad day! I totally feel you on needing a good cry and on the mommy hugs –they definitely make everything better 🙂
Thank you so much, Mimi!!
I’ve never tried avocado mousse but obviously I need to. Love the caramelized bananas! I so agree that a hug can fix the worst days. Hope today was better!
Oh I think you would love it! Every time I make it I am amazed!!
Oh, I certainly do know how that feels! I find that everything seems to go wrong on the same day … one thing at a time, you can cope, but all together … that’s tough!
Anyway, Tieghan, looks like you cheered yourself up OK with this lovely mousse. I’ve been intrigued by this avocado in chocolate desserts idea for a while now … maybe it’s time to give it a try!
Thanks Helen! You have to try the avocado desserts. They are just incredible!
I’m so sorry your day was awful! Someone told me that yesterday is statistically the most depressing day of the year, and I believe it! Your mousse looks amazing though, so at least there is that. And hugs 🙂 I have been dying to try an avocado mousse – it looks so rich and velvety.
Thanks so very much, Cate! The mousse is honestly s velvety. That is a great word for it!
Perfect shade of turquoise, you read my mind. Like, I wash dishes a gazillionty times a day. How would my nails stay perfect? My house is too chaotic to even know where the rubber gloves are. 🙂
You KNOW I’m ALL OVER THIS. Love!
Haha!! Yes! See you get it! 🙂
Thanks Dorothy!

yea the recipe was sooooooo good thnx Miss T
I just had a moment – stop, drop, and comment – to comment this lovely mousse! Dark Chocolate flavor with avocado textured mousse has got to rock! I have never tried caramelized bananas, but the fact you used coconut oil is like a double bonus!
Haha!! Thanks you so much, Kira!
Hope you get to give these a try!
Made this tonight…it’s chilling in the fridge as I type this. Can’t wait to eat it. Two things:
1-Shellac Manicure: Totally worth the extra money if you’re going to do it…lasts for a couple weeks, and if you’re in the kitchen all the time, it actually holds up.
2-FIRE: You totally have to flambe the bananas in this…way more fun…just be careful! 🙂
Hope you love this!!
Thanks for the nail tips and yes to the bananas!
I just came across your website for the first time last night and decided to make this incredible mousse when I realized I had all of the ingredients. I melted Ghirardelli 60% chips and used dutch process cocoa powder – also used 1 tsp espresso powder, which was already “powdery”. When I tried a fully chilled spoonful this afternoon I was IN LOVE!!! My 14 year old son thought it was amazing too…it pleases me to feed him things that are good for him when he doesn’t know it!
Thank you for posting and I can’t wait to check out the rest of what you have to offer. I’m totally sharing this recipe with my sister!
Awe!! YES! This makes me so happy! Thanks Kristen and I am so happy you guys all enjoyed this!
This. THIS. I can’t wait to try this recipe, Tieghan! It looks incredible. (Also, your photography is wonderful—just came across your blog.)
Thank you so much, Annie!
Tiegahan your blog is quite incredible. From your photos to your recipes, you really are amazing!! Really an inspiration x
Lots of love

Aww! Thank you so much, Susie!! 🙂
Hey,
I was wondering if you can replace (or not add) the rum… Is there even a slight chance? This looks amazing!
Daughter of the King
Hi! Adding the rum is totally optional. Hope you love this!
Hey Tieghan,
I must say I tried and tested it on my husband, guess what happened!!.. He like it.
Cheers!!
This is a very good tip especially to those fresh to the blogosphere.
Brief but very precise info… Many thanks for sharing this one.
A must read post!
Thank you!
will definitely try this receipe, looks easy, and delicious!
