15 Minute Garlic Butter Ramen Noodles with a little bit of “sneaky” zucchini hidden throughout. These noodles are for those nights when you’re craving simple summer flavors, but are also looking for total comfort food in a bowl full of buttered noodles. This dish has brown rice ramen noodles tossed with golden caramelized garlic butter, shredded zucchini, a splash of soy sauce, and so much fresh garden basil. Not only are these noodles delicious, they’re also made easily using just 7 ingredients, and ready to eat in 15-minutes. Perfect weeknight noodle dinner!
These noodles are what I call “college student” food done healthier…thanks to the addition of brown rice ramen and plenty of summer zucchini. And while this recipe is the simplest, I can promise you that it’s also delicious. It’s a recipe you’ll make time and time again. Maybe on a rainy night (it’s currently downpouring) when you just need a bowl full of comfort in the form of buttered noodles.
Truly the perfect easy Monday night dinner to enjoy.
The Inspiration.
Growing up there were many summer nights that my mom would request buttered noodles tossed with my dad’s garden basil for dinner. Anyone who knows my mom knows that she practically survives off of bread and noodles with the addition of hot chocolate. Yes, some fruits and vegetables are mixed in too, but my mom loves noodles, pasta, and bread. Seeing as we spent a whole lot of time together growing up, I too love a simple bowl of buttered noodles with fresh basil tossed into the mix.
And Asher does as well. Apparently this “buttered noodle” trait runs with the girls of the family. My brothers could care less about any kind of noodle that doesn’t come with a side of meat.
Anyway, this is, of course, a simple concept. But every summer I try to come up with a new way to make buttered noodles feel special and exciting again. This year I’m pulling out an oldie recipe and giving it new life, enter these ramen noodles.
I first made these noodles over four summers ago and had completely forgotten about them. But when I walked over to the garden the other day and saw all the basil I was suddenly hit with a round of deja vu. And thus the idea to remake these noodles was born.
Garlic ramen, but with the addition of basil, shredded zucchini…to incorporate summer vegetables, and a splash of soy sauce. Was it too simple of an idea? Maybe.
But does it sound delicious? Yes…so very delicious!
So I went for it, and now we have 15-minute garlic butter ramen noodles to enjoy for dinner tonight. It’s going to be good.
The quick recipe run-down.
First, things first, the noodles.
Personally, I love using brown rice ramen, which are vegan and gluten-free. I know it might be hard to believe, but these really do taste just like the ramen noodles we loved as kids…just much healthier. You can find these noodles online, either on Amazon or Thrive Market. Or you can purchase them at Whole Foods, Costco, and in many grocery stores as well.
Of course, you can also use whatever your favorite brand of ramen is…hello to a little Top Ramen. That works too! Just discard the seasoning packet. You won’t need it for this recipe (though, in thinking about it, I imagine that could be good as well).
While the noodles are cooking, start in on the butter. If you can find it, use cultured butter (sometimes referred to as European butter). It’s my favorite butter to use for both cooking and baking, I especially love Vermont Creamery’s Cultured Butter. I’d also recommend my other go-to butter, Land O’Lakes Extra Creamy Salted Butter.
Now, melt the butter. Add the garlic and let it get golden and caramelized (the kitchen will smell like garlic butter…a wonderful thing). Toss in some fresh ginger and shredded zucchini. Now add the noodles, a splash of soy sauce, and finish it off with all that fresh summer basil. The basil is KEY here so please do not skimp on it. And please, use fresh. Trust me, it’s worth a market run for good fresh basil as it adds all the flavor to these noodles.
Serve the buttered noodles with a sprinkling of toasted sesame seeds, and if you’d like, a soft boiled or fried egg.
Simplest summer dinner, but every twirl of noodles just kind of melts in your mouth.
Think buttery, slightly garlicky noodles, kicked up with ginger, seasoned with the slightest amount of soy sauce (that brings just the right amount of salty savory flavor), and heavy on the basil.
It’s all just delicious. Enjoy your 15-minute noodle dinner guys!

15 Minute Garlic Butter Ramen Noodles.
Not only are these noodles delicious, but they’re also made easily using just 7 ingredients, and ready to eat in 15-minutes!
Ingredients
- 2-3 brown rice ramen noodles
- 6 tablespoons salted butter
- 4 cloves garlic, minced or grated
- 2 teaspoons fresh grated ginger
- 2 small or 1 medium zucchini, grated
- 1/4 cup low sodium soy sauce
- 1/2 cup fresh basil, roughly chopped
- 4 soft boiled or fried eggs (optional)
- toasted sesame seeds for serving
Instructions

1. Bring a large pot of water to a boil. Cook the noodles according to package directions. Drain.
2. Meanwhile, heat a large skillet over medium-high heat. Add the butter and garlic. Cook until the garlic is golden and caramelized, about 2-3 minutes. Stir in the ginger, cooking another minute. Stir in the zucchini, cooking another 2-3 minutes, until the zucchini wilts into the butter. Stir in the ramen noodles, soy sauce, and basil. Gently toss to combine. Remove from the heat.
3. Divide the noodles among bowls and top with sesame seeds, basil, and eggs, if desired. Eat immediately...enjoy!

I wish I had this recipe back when I was a student, I lived off of Ramen noodles and the seasoning pack flavours became dull very quickly!

Really, favorite birthday dinner? Sorta hard to choose because one thing in life that should be varied is flavor and texture. But a favorite meal is my mother’s Split Pea Soup–where the peas are cooked down to the consistency of potato soup. Chunks of yukon gold potatoes, carrots, and kielbasa are nummy nuggets in the flavorful soup. Of course, crusty bread with butter on the side.

Oh this will be perfect ! I’m starting to plan my moving at the end of September. Between the unboxing, buying stuff, the empty fridge and pantry and all, I’ll not have much time to cook. Also, i feel you for the birthdays. I’m exactly like you. I turned 25 this summer, and while for most it’s the perfect excuse to throw a big party, I’m glad we keep it low key. I soo need this in my life. I love ramen in all form whether it’s the instant kind or the authentic Japanese kind. It’s like a comfort food. So this is so totally my type of food. Plus it’s 15 minutes and it’s garlic butter. How can I possibly pass this up? And I think the youngest always gets special treatment. Birthday talk/celebration seem to last for weeks!

Love this recipe and that it only takes 15 minutes. I’m going to Whole Foods in hopes of finding the Ramen noodles packets. I LOVE my birthday and everything about it. My favorite birthday food item isn’t always the same because it’s usually a nice restaurant that I love but don’t get to go to very often, or trying a new restaurant! Uchi!! If you’re ever in Houston or Austin you have to check out Uchi. (the best sushi)

I LOVE my birthday and my most favorite so far was turning 40 (3 years ago) – I celebrated for 4 days!!
My favorite birthday dinner as a kid was spaghetti with Prego sauce because my mom always made her own homemade sauce and Prego was reserved as pizza sauce. I now appreciate the richness of homemade sauce but still like Prego as a treat now and then.

Happy late birthday to Miss Asher!! As for my birthday, I love it! Even though I don’t like so much being the center of attention, I love having my family around and being able to hang out and do chill, fun things all day (or most of the day ?). We never had birthday parties, though, and we don’t live around our extended family (GIANT sad face for that…this year’s birthday is going to be extra special in at way, because my family’s taking a vacation to visit our relatives over my birthday, so I’m pretty pumped to be able to be surrounded by a bunch of my favorite peeps for the day!), so our celebrations were just with our parents and sibs. We usually did similar to how you outlined your birthdays growing up: presents, birthday dinner, singing Happy Birthday, cake, yearly birthday pics, and sometimes a family movie picked by the birthday person. Hope Asher has/had a great time at her party!

This might be a dumb question, but what’s your method for soft boiled eggs? I’ve never tried it and if they’re much softer than hard-boiled, which are already hard to peel…what’s your method for peeling them without destroying?

Hey Heidi! To be honest, I have a really hard time with peeling my eggs and have yet to find a great method. I used older eggs, which I have been told peel better and that does help a little. I also peel them under water and that helps a lot. Let me know if you have more questions. Thank you! 🙂

Made this over the weekend, came out great! Did add some carrots(cut in thin strip sticks , cause quickly found out they were too skinny to use in spiralizer , LOL) & chopped up left over boneless pork from chinese restaurant. (was trying to use up leftovers)

I followed the link here fully expecting to be disgusted at this bastardization of noodles as I know it, but this actually looks really good! In fact, it reminds me of a classic Korean comfort food, from way back in the 70s when a lot of families were entering the middle class, but weren’t really well-off either and often had to stretch meager ingredients to make a meal: butter (well, margarine, in our case) and soy sauce mixed into hot rice!
A lot of mothers added doenjang (Korean fermented bean paste similar to miso) to the mix as well, and I never heard of anyone adding garlic, but I’m sure no Korean would be objecting to extra alliums! Eggs were a luxury at the time, and if you had them in the 70s, you probably wouldn’t be adding them to such a simple and cheap dish, but today eggs are cheap and abundant and they taste like they belong in a dish like this, so it’s a common ingredient in the modern version of the dish.

Oh, which reminds me… toasted sesame seed oil (the kind you find at Asian groceries) was also a common ingredient! In fact this is what I recommended to my vegan friend as a sub when I shared the recipe with her.
If someone is not opposed to eating dairy, but cannot due to health reasons, I might also recommend replacing the butter in the recipe with ghee… some (not all) people who are normally intolerant to butter and other dairy find ghee tolerable, because all the milk solids that usually are the cause of the trouble are rendered out of ghee, leaving behind only the milkfat.
Oodles of Noodles that’s what I grew up calling them too. First thing mama let me “cook” by myself I still love these guys lol. Never met a ramen noodle dish I didn’t like. Can’t wait to try ?

Delicious, once again! We made this for dinner tonight. I have never made an Asian type dish before. Never have cooked with ginger, sesame seeds, or ramen noodles but I went off it and it was great. We will make this a weekly staple in our home. The zucchini is a nice summer touch and I will probably also use broccoli, carrots and snap peas. Perfect comfort food. I highly recommend.

This is delicious! I needed to use up some meat in my freezer, so I marinated some duck in soy sauce, rice vinegar, sugar, garlic, ginger, and red pepper flakes, seared that, and added it in, but I will definitely make this recipe with eggs and tofu (same marinade as above) too! It came together so fast, which is my favorite part.

This was yummy! I did change it, but only because of availability of items. I used ghee because I know it can handle a higher heat. Yuuuum! Just made this for dinner. I used half brown rice and half jade pearl ramen noodles I had from some soup packs (didn’t add in their seasoning) and then added in some yellow squash with the zucchini and basil. I used a fried egg on top so I’d have that extra creamy addition to the sauce. Turned out great and I will definitely be making this again! So easy and so good!

This was so good I wanted to lick the bowl. We doubled it for the 6 of us and added a few cups of corn from the ears we’d cooked the previous night. I’ll admit I didn’t expect much from the brown rice ramen noodles (I’ve been burned pretty much every time I’ve tried to switch from the old favorites), but I loved them. I tried this recipe tonight and absolutely loved it. This might sound like a silly question (I am new to cooking so forgive me) but when you say “2-3 brown rice ramen” do you mean containers or individual noodle cakes? I used the former and it was a lot of ramen not that I’m complaining because it is absolutely delicious! It would just be good to know for future use. Thanks for sharing such a yummy recipe and inspiring newbies like myself to cook!

You must have been half baked when you judged the prep and cooking times. Food was good but please show me how you soft boiled eggs, grated zucchini, minced garlic, chopped basil, and grated ginger in 5 minutes! It seems that you consistently lower the prep time to get clicks. I like your food but get more frustrated with your ridiculous prep time estimates. And please don’t tell me you had 4 soft boiled eggs on hand!

I’ve made this and you should too! Easy, comforting, lots of flavor and still light. I used the Costco brown rice noodles. My only change is the addition of scallions to the garnish and used more zucchini it’s a wonderful, simple dish that really takes only 15 minutes. Highly recommend!!

I made these with fresh ramen noodles, and added some red chili flakes for a touch of heat & me and my husband both LOVED this dish. We were craving take out, and we both agreed this was better than takeout! Will definitely make again! So simple, and so delicious! Definitely recommend the chili flakes for those who like spice!

Loved loved loved this recipe. It was the perfect meal for our family to eat this weekend–comforting, easy, and so very tasty! The butter/garlic/zucchini/ginger mixture was incredibly delicious. I later wondered if adding 1/4 C soy sauce was a tad bit too much–i.e. for me it slightly overpowered the taste of the garlic butter. Next time I make this (uh, like tonight), I think I’ll reduce the amount of soy to really enjoy the divine umami flavors this dish brings to the table. Thanks Tieghan!

Delicious. My only note is that I used 3 packets of the recommended and linked brown rice ramen and 3 packets of this do not make 4 servings. Maybe small side dish servings. But barely 2 main dish sized servings. So for our family of 5, we would need like 8 packets. There were so few noodles after cooking that I was looking in the drain to see if I accidentally dumped them, lol! But other than ending up with way less portion than expected, the noodles were delicious!!

Delicious! Made a dozen times. We also toast some rice crispies in a tsp of sesame oil and add to top- nice crunch!
One question- the cookbook version is for 2 and this is for 4. But it’s so delicious I’ve made for crowds- 8-10. It never turns out right when I double and triple. I think I’m using too much buttter? Or maybe it’s too many noodles in the pot and they stick? Any advice on how to double or triple while maintaining current level of deliciousness? ☺️

I pin a lot of your recipes but this is only the second one I’ve made. I needed a quick weekday meal so I tired your 15 minute garlic butter ramen noodles. Just made this last night! Didn’t have zucchini so shredded carrots; didn’t have basil so subbed in cilantro. It was delicious! And I love the brown rice and millet ramen from Lotus ( also like their Pad Thai noodles).
