This 30 Minute Thai Peanut Chicken Ramen is for those nights when you need a cozy, healthy dinner, and you need it fast. All made in the instant pot (or in one pot on the stove), using healthy, pantry staple, ingredients. It’s creamy, spicy, filled with veggies, lean chicken, and ramen noodles. Perfect for a cold night in, after a long busy day.
It’s official, I’ve entered full on cozy food mode and don’t see myself straying from it anytime soon. Currently all I can think about is slow cooked dishes, creamy soups, pastas, bowls of chili, homemade beer bread, and fall baking. It’s possibly the best thing ever and I’m loving it!
We had a cold front move in this week. Monday was dark and stormy almost all day. Our leaves are just passing their peak color, and it’s the perfect fall weather. Soaking up this time before the snow comes and the ground is covered in white…not ready for that.
I know I’ve been saying this very often lately, but this is the best time of year. Makes me so happy!
I’m also loving the fact that I am finally starting to get a good rhythm going on in the new studio. So far this week I’ve had three solid days of work. Feels really good to be back to my normal self, cooking, photographing, writing, etc, etc. Love a good busy day that feels productive, the best!
Anyway…
Moving onto this bowl of ramen which I am so excited to share with you guys. Every fall it’s become a tradition to make a new ramen recipe. This year it’s about this creamier Thai inspired peanut chicken ramen.
This is actually a recipe that I adapted from years and years ago, and I’m loving this new fresh take. Plus this version is easier and slightly healthier too. Cool. Cool. Always love easier and healthier without having to sacrifice flavor!
Here are the details.
I wanted this recipe to be EASY enough for weeknights, but also DELICIOUS. Lately I’m loving using both my instant pot and slow cooker. It was either cook this ramen quickly, or go low and slow with it. Since nothing in this recipe really needs a long and slow cook, I went with my instant pot (which I’ve truly been using every day).
SO, add all ingredients to the instant pot, set it to cook for ten minutes, walk away, pour some wine, make a cocktail, fold laundry, scroll the Gram, do whatever it is that you do. Then come back, shred the chicken, add the ramen noodles, cook five minutes, and dinner is done.
YES. It’s that simple, and I promise, it tastes great too!
As you can guess from the recipe title, this is not your average bowl of ramen.
I used some of my favorite Thai ingredients like Thai red curry paste, coconut milk, peanut butter, mushrooms, and bell peppers, to create a ramen that’s a mix of both Asian and Thai flavors. It’s definitely very different, but don’t worry, it’s delicious.
For the actual ramen noodles, I love using Brown Rice and Millet Ramen noodles (which you can find at Whole Foods and in many grocery stores). These taste just like real deal ramen noodles, but they are much healthier, gluten free, and vegan. Also, I recommend storing the soup and noodles separately, then adding the noodles just before serving. If you let the noodles sit in the soup, they will soak up all the broth and become very mushy.
This ramen is perfect for any night of the week whether it’s a crisp cool night, pouring rain, or a night where you just need a healthy dinner, and you need it fast.
It’s warm, creamy, peanutty and salty. My current favorite bowl of soup to cozy up with on the couch after spending all day testing recipes, emailing, and running around like a crazy person. I love autumn, but man, it’s always crazy busy! Thankful for easy dinners like this!

Ingredients
- 4 cups low sodium chicken broth
- 1 can (14 ounce) coconut milk
- 1/4 cup low sodium soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons honey
- 1/3 cup creamy peanut butter
- 1/4 cup Thai red curry paste
- 3/4 pound boneless, skinless chicken breasts
- 8 ounces cremini mushrooms, sliced
- 2 red bell peppers, chopped
- 1 inch fresh ginger, grated
- 1 clove garlic, minced or grated
- 2-4 squares ramen noodles
- juice of 1 lime
- 3 cups fresh baby spinach
- 1/3 cup fresh basil or cilantro, roughly chopped, plus more for serving
- chopped peanuts and toasted sesame oil, for serving
Instructions
Instant Pot

1. In the bowl of the instant pot, combine the chicken broth, coconut milk, soy sauce, fish sauce, honey, peanut butter, and curry paste. Add the chicken, cremini mushrooms, red peppers, ginger, and garlic. Cover and cook on high pressure for 10 minutes.
2. Once done cooking, use the natural or quick release and release the steam.
3. Set the Instant pot to sauté. Shred the chicken, it should fall apart. Stir in the noodles, lime juice, spinach, and cilantro. Let sit 5 minutes or until the noodles are soft.
4. Ladle the soup into bowls and top with peanuts and toasted sesame oil. Enjoy!
Stove Top

1. In a large soup pot, combine the chicken broth, coconut milk, soy sauce, fish sauce, honey, peanut butter, and curry paste. Add the chicken, cremini mushrooms, red peppers, ginger, and garlic. Set over medium heat on the stove and bring to a simmer, reduce the heat to medium-low and simmer 15 minutes or until the chicken is cooked through and shreds easily.
2. Once done cooking, shred the chicken.
3. Bring the soup to a boil over high heat. Stir in the noodles, lime juice, spinach, and cilantro. Let sit 5 minutes or until the noodles are soft.
4. Ladle the soup into bowls and top with peanuts and toasted sesame oil. Enjoy!

Can this be made freezer-friendly?

Made this tonight ! Delicious but took much longer than 20 minutes haha. The 5 minute prep is a bit of a stretch .. chopping everything, grating the ginger, measuring out all the ingredients, opening can+ assembling it in the pot definitely took longer than 5 minutes. It was really good and I’ll make again, but the times should be more realistic ☺️

I made this tonight, and I have to say it is the perfect cozy supper for cold and flu season! Smells warm, tastes warm, feels warm! Perfection! Everyone around here is fighting off a bad cold bug that’s going around town, so meals lately have been pretty lackluster. No one has had the energy or appetite to attempt making anything significant, but the smell of the spices as this was cooking got everyone to perk up and visit the kitchen tonight, and most of us went back for second helpings.
The curry paste I bought tonight on special was quite a bit hotter than my usual variety, so the sauce was VERY spicy. Way too spicy for my little bro, so he opted for a bowl of plain chicken ramen. But even so, he kept snitching noodles out of my pot, then guzzling water, while his was cooking because he said he loved the flavors in this dish, and he didn’t want to miss out entirely.

I made this recipe a couple nights ago. It did take me longer than expected to put it together but I’m sure it will go faster as I make it more often. Fairly healthy, yummy, simple, great flavor. Wonderful soup! This was a HUGE hit at my house. The only thing I did differently was I cooked the separately so that the leftovers wouldn’t be mushy. It tasted amazing the next day as leftover lunch! Great recipe.

Delicious flavors! I purchased my InstaPot to make this dish, and think I’m going to love this new tool.
My modification would be to add 3-4 chicken breasts and garnish with cilantro versus the basil. Some garlic Nan bread would be a nice complement to the dish. Makes enough for leftover night this week. Yummy!!!

Delicious flavours. Agree the prep time was longer than expected. I made the stove top version and had to substitute the noodles. I think I may have put too many noodle in as the noodles absorbed quite a bit of the soup base? How many grams of noodles would you recommend?

I made this on the stovetop, delicious depth of flavor for a quick soup. However, I would decrease ramen blocks to two, the noodles absorbed all the soup base, although delish it was too thick. I roasted the mushrooms & peppers before putting them in the soup. I would double all veggies & add more garlic & ginger. I also would up the spice factor. I would also increase the amount of chicken. Topping with peanuts & cilantro added to the yummy factor! Thanks for the recipe, will make again for sure!!

Just finished making the Thai Peanut Curry soup. Easy and delicious, but I really had to amp up the condiments to eek out a little umami (doubled the fish sauce, curry paste, soy), plus I added a bit of sriracha for a bite. And substituted tofu for the chicken. Thank you!!!

Just made on stove Thai peanut chicken ramen! I could eat every day! I adjusted slightly…my chicken was cooked and I used less. Could eliminate entirely really. I just made this soup tonight and it was amazing! My husband said it was the best dinner I have ever made (he had 3 bowls of the soup!!!) . The only con was that it took me 60 minutes from start to finish and not the 30 minutes advertised (I don’t have an instant pot and cooked it stove top). Made this last night after drooling over the picture for a few days. I had made the Thai butternut squash dish one night last week & didn’t want to push Thai food on the hubby so soon. When he came home from work, he said, “do I smell Thai food”? He sounded a little disappointed but when he ate the soup he purred like a kitten & grabbed a second helping. He practically licked the bowl clean so I guess I can say it was a hit! People cooking with the IP should remember that heating up time can take a little longer than expected depending on the temperature of your ingredients. I do wish I had held off adding all of the noodles at the end since we have enough leftovers for another meal & my noodles have REALLY soaked up all that flavorful broth but we’ll just have to eat it with a fork in addition to a spoon. Real world problems….hahaha

My dear, amazing cook, friend, who is a long time fan of your’s, sent me this link and told me this recipe was AMAZING!. Never having cooked Thai, It took me all week to gather the ingredients and 2 hours make, prepping the ingredients. However, it was totally worth it as my very picky eater husband and I loved it! (I did not tell him it contains fish sauce as he hates fish). I added chopped bok choy and cooked the Millett/brown rice noodles separately and when rinsed added some roasted sesame oil as suggested by my friend. This was sooooo good! I’ve made it vegan by using vegan chicken, vegan chicken stock, maple syrup instead of honey en left out the fish sauce. It was superb!! I also don’t own a instant pot, so I just made on the stove using a dutch oven. Thank you so much for your awesome and delicious recipes <3

Made this on Saturday night for a friend and my boyfriend and we all LOVED it!! I added eggplant too (because I love eggplant in anything with curry!) and it worked out perfectly.
In the future, I think I might make the noodles separately and add them to the veggies/chicken/broth before spooning out. They ended up absorbing most of the broth, and now there’s no broth left for leftovers. No big deal though, I’m just going to make a pot of the broth tonight for the little bit I have leftover and freeze the rest!

This looks like a great recipe! I can’t wait to make it tonight. The recipe calls for the juice of 1 lime, and the images show lime wedges in the ramen. Do you juice the lime and then add in a wedge per bowl? Or, do you cut into wedges, squeeze into the ramen and plop the wedges into the broth? Or, do you add whole wedges and allow for the juices to be extracted? Thanks!

Oh. My. God.
As soon as I saw this recipe on your Instagram the other day I flew onto Amazon and ordered an Instant Pot (I got a Mealthy one). It was scheduled to arrive today so I shopped for this recipe and made it using my Instant Pot for the first time. My boyfriend and I FLIPPED OUT eating this dish. It was absolutely insanely delicious and unique, hearty yet somehow light, and hit every note on the tastebud scale. Plus it literally took LESS than 30 minutes to prep and cook… it honestly would have been even less if I didn’t count the time it took for the Instant Pot to preheat.
The only thing I’d do next time is to cook the noodles separately so we could save leftovers without the noodles in them (because we will ABSOLUTELY make this again…and again….and again). Thank you for such an amazing recipe!

ok I never leave comments but I just made this and OMG! SO GOOD. I’m already planning to make it again and double it. I eliminated the honey and used shirataki noodles (trying to be low carb) and it’s perfect. I think there’s lots of variations you could do with this too- different veggies to your liking and it would be really good with shrimp I bet. Thank you!!!

Delicious! We’re not mushroom fans, so instead of mushrooms I added a similar quantity of snow peas (added with the noodles at the end) to keep the vegetable content adequate for a meal on its own. We also liked it served with sriracha!

I’ve made this twice so far and it is excellent! I love the flavor profile and the back-ended heat from the curry paste. The second time I made it, I kept out the ramen blocks and added them when I took it for lunch or as leftovers for dinner, it kept the noodles from getting too squishy the second time around.

Oh my goodness this recipe is so good! I made it with red bell pepper (which I’m pretty sure is not what was meant by red pepper now that I’m re-reading the recipe) but it’s still really good. My 16 month old even ate a small bowl and is running around munching on chunks of chicken from the soup. I will definitely be making this again!

I made this last night, had it for leftover today, and a few things have really frustrated me:
– the prep time is wildly inaccurate. I’ve scrolled through the comments and see that multiple others have noted how off the prep time is, and how it took them much longer. I understand that you can’t be perfectly accurate to everyone’s skill level/kitchen layout — but when SO MANY people are telling you that the prep time is too short, that should be a signal for you to update the recipe. 5 minutes is ridiculous — I’d at least say ten but to be honest, for most people it would be 20 (and the comments have reflected this). strongly recommend you change the prep time
– i wish you have noted in the actual recipe that for meal prep purposes, the noodles should be cooked and stored separately. You have stated this in the comments, but it would have been helpful in the recipe. I cooked it all together as per the instructions, and today it’s a gross mushy mess. The broth is completely absorbed and it basically tastes like instant ramen. Such a shame after spending 1.5 hours cooking this last night, and only getting one good portion out of it. i’m tempted to just throw it all out now because it’s sooo noodle-y.
– i’d decrease the amount of ramen – 4 squares seems excessive and it overpowered the other wonderful flavours.
Most of these comments have been made by others as well, so I think you should incorporate them and update your recipe accordingly. these inaccuracies make me hesitant to try another one of your recipes.

I am sorry you have had trouble with this recipe. My prep time is 15 minutes and not 5 minutes. Maybe you misread? I think 15 minutes is a fair amount of time for prep. I am not seeing SO MANY comments stating that they had issues. Most readers have really enjoyed this recipe and not had issues. Also, did you happen to actually read my blog post? I noted within the post that you should not leave the noodles in the soup. They will soak up the all of the broth. I have now edited the recipe to include this note. I am sorry if that was not clear for you. Please feel free to use less ramen noodles. Thanks for all the feedback. Sorry you had trouble, but glad you felt the soup was flavorful. Ok this was amazing! BUT. The calorie count above says 243 calories for 1/6 of a pot and when I put the ingredients into a calorie counter it is MUCH higher than that. What are you using to calculate this?

Those asking about spinach – I subbed for bok choy and it came great! I threw the stems in with the rest of the veggies and the leaves in with the noodles. It worked pretty well!

This may be a dumb newbie instant pot user question but any reason why you can’t half the recipe? I probably wouldn’t want to make 6 servings! Although I guess you said you could freeze it. Do the veggies, peppers, spinach really freeze well?

I made this ramen the other night and raved to all my coworkers about it. It came out OUTSTANDING. I did add 2 cups of water to it as I read the broth came out a little thick and I like soupier ramen broth. Also added a little extra soy sauce and added in about 2 tbsp of red chili paste to give it a kick. I baked my chicken breasts separately and shredded them and added them to the broth at the very end. Definitely will make this again. Super easy and made great leftovers!

I found this recipe on the HBH Instagram feed and decided to take it for a spin. Two things I like about this recipe: 1) It’s super fast – perfect for a weeknight. 2) I usually have all the ingredient on hand. I followed the recipe exactly for the Instant Pot, but held the noodles out. I cooked authentic fresh ramen noodles (Sun brand) and topped them with the curry mixture. Fantastic. My spouse and two kids loved it. Now that the cold weather has set in, this has been on our menu rotation and we’ve enjoyed it multiple times. Wonderfully soothing flavors and the red curry punch is fantastic. Thanks Tieghan!

Hey Shawna! This is actually not a recipe I recommend freezing. I am sure freezing the broth would work just fine, but I do not think the noodles would freeze well, especially in the soup. I’ve made this three times already because my household is obsessed with it. I hate bell peppers so I add shredded carrots in the last few minutes of simmering and use baby bok choy instead of spinach. I also add a kefir lime leaf and offer chopped green onion as garnish (I love, some don’t). Otherwise pretty much exactly as is.

If you don’t have an instant pot and would prefer to use a crock pot instead of a pot on the stove, is that still an option? Crock pots are just so much easier!
Hey Ellen, you can slow cook the broth for 4-6 hours. Just follow the same directions for the instant, but I would recommend cooking the noodles in a pot of boiling water and then adding to the soup. This recipe is great and very easy to make and won rave reviews from everyone in the family. I will mention that I used boneless chicken thighs and increased the amount from 3/4 lb. to just under 1.25 lbs. and it still seemed a little light on meat. You may or may not find that this is the case but I was feeding two men one of which was a teenage boy. Next time I’ll probably add at least 1-1/2 lbs. of chicken to the recipe. I also added additional fresh ginger to the above recipe (can’t have too much ginger).
Do yourself a favor and make this delicious meal on a cold winter night, you’ll be glad you did.

Omg is this good!!! I substituted Liquid Aminos for soy sauce because I ran out of soy sauce, and the toasted flavor was on point!! My husband loves spicy flavors so he added a little bit of Siracha chili sauce on top.

About 50% more noodles than the recipe calls for makes this one of my favorite recipes on your site. The others are correct: there is an up-front time investment in prep, but most Asian dishes require lots of chopping and gathering ingredients – your skill with a knife determines how much time it will take. Give yourself an hour and you will have plenty of time to have this dish ready to serve. Very tasty. If you enjoy this, try the Pork Ramen Soup (with acorn squash) – but save it for the weekend. It takes a bit more time to put together.

This is probably my all-time favorite recipe. I don’t generally leave comments but I have made this so many times in the last couple of months it seems unfair not to. Thank you!
Based on other comments I do add about a cup of water before I add the last 4 ingredients at the end, and it is still incredibly flavorful.

This recipe is amazing! Love that I can make it in the IP. Best things about it are:
1) It can be made easily with ingredients that I almost always have on hand
2) I could make it while my kids started their bath and then while it cooked in the IP I could finish up bath time, get them dressed and set the table.
3) My 3 and 5 year olds both willingly ate it with relish!!! I had actually prepared plain ramen just in case they balked at it and there was no need for it. No complaints, no whining, just noodle slurping and drinking the broth straight from the bowl!
This is sure to be a new staple in our house!

I made this last night for a small dinner party and it was SO GOOD! Everyone had seconds! It has just the right amount of spice, sweetness and citrus and it was so easy to make. I put all of he ingredients in the pot and stuck it in the fridge u til my guests arrived. 10 minutes later, dinner was served. I would suggest using only 2-3 ramen noodle sheets instead of 4. I put 4 in and it really sucked up a lot of the soup. I’m definitely going to make this again. I might try it with rice next time.

Just finished making this for tonight’s dinner… LOVED IT! All 3 kids enjoyed it and finished multiple helpings. Hubby claimed one of the best meals I have made in a long time. There was not a drop left! Followed the recipe exactly… so easy to make. I made it on the stove top because I do not have an instapot, still finished from start to finish in under an hour. This will be added to our regular menu rotation. Can not wait to try more of your recipes. ( Crockpot bolognese is on the menu for tomorrow!)

Made it twice! 1st time w too many noodles.. Way too many… It was no longer soup…lol but still really good. 2nd time added more veggies and used rice noodles.. Still awesome!

Pro tip: make your own thai green/ red curry paste and freeze it in an ice cube tray. Makes a huge difference when you add your own to recipes.

Wow, Tieghan! This is simply an amazing recipe! My family used to live in NJ and used to be spoiled by the fabulous twice-a-day-housemade ramen at local Ramen restaurants. Now that we live in NC, we have yet to find anything close. This dish was so easy to make (kudos Instant Pot!) and the flavor profile was absolutely outstanding. Amazing and so easy to make.. I use more red curry paste to give it a little more flavor but other than that this recipe is on point.. my family loves it and I make it at least once a month!!

Great recipe! I see why it was your top recipe of 2018! Like many others, I received an Instant Pot for Christmas. This was my first meal in it. Your post inspired me to finally try it! The soup is great. It reminds me so much of Tom Kha Guy soup (ignore my spelling btw) but with the addition of peanut butter. I made this and absolutely loved it! I like my ramen type soups with lots of veggies so I added bokchoy, matchstick carrots, snow peas, and bean sprouts. It was a major hit in my house.

This was amazing, I love ramen & Thai curry so thought this would be good to try.
I changed a few minor things, I used vegetable broth (boiled veg scraps in slow cooker), quorn fried off and added before serving, no fish sauce and added the coconut milk at the last min (didn’t boil),I also forgot to add the peanuts I bought, naughtily I used supernoodles (without seasoning- people think I’m gross but I love them and added jalapinos!
The options with this are endless it’s such a good base to create unique quirky ramen.
The peanut butter was not over whelming but added such a good flavour. Loved it!
I’m a not a chicken lover and have always prefured the meat free alternatives or other meat and Had the quorn bits to use up but will try with pork I thibk next time and possibly top with eggs.

Made this for first time tonight and it was awesome! The flavor of the broth tasted like it must have simmered for hours upon hours and it was ready start to finish in under an hour. I added a soft boiled egg as an option to the finished bowl and it worked well. My wife is taking another bowl of soup to work tomorrow and I will be making this again soon!

I made it and had to substitute some ingredients but all in all it was delicious, easy to make but a bit more time consuming (I made it stovetop). I would recommend cooking the noodles separately and adding the soup-like ingredients over the noodles when ready to serve. I used 3 packets of the brand of noodles you recommended and they broke apart and got soggy.

To store the noodles separately for left overs, would you still add in all the noodles the night you cook the dish, then try to remove the noodles for storage? I am making this tonight for me & my husband but we wont eat the whole pot, so I’m wondering if I should add noodles to the instapot or do it on a bowl by bowl basis? Not sure how that would work!? Hi! I recommend cooking the noodles separately and then adding them to your soup bowls and pouring the soup over the noodles if you are looking to store them for later. I’ve made a similar dish before but had never thought about adding peanut butter! It was such a great addition!! I minced the ginger with garlic and sautéed them before adding mushrooms and peppers and then curry paste (I just like a little color on everything first!) I found the noodles at whole foods and was pleasantly surprised by how delicious they were, with a nice texture too. Thanks for upgrading my regular ramen soup recipe!

Just finished making this and it definitely gets a big thumbs up. Next time, I’ll probably up the spice level just a bit, and I might stove warm the red peppers and then put them in while it’s on sauté. No one but me liked the toasted sesame oil-oh well-I liked it. I might try bok choy instead of spinach and see what that’s like, but the spinach was fine. Really a great, hearty soup, and very highly recommended. I’m not sure what the two who were concerned about the prep time were upset about-it took me less than ten minutes to mince the garlic and ginger, cut the peppers, and slice the mushrooms.

Wow! This was so delicious. I skipped on the mushrooms, since I’m not a big fan, but even so it was just what I needed. I added some red onion, lime and extra cilantro on top. The broth was a bit thick, more of a sauce, not sure if it was supposed to be that way or more of a soup texture. Hi, Ijust made this soup and currently simmering on the stove and smells amazing but it looks like perhaps the peanutbutter curdled? , have you ever experienced that? It looks the same way that a cream product looks when it curdles. I’m so sad about that

I loved this, but more importantly, my picky fiancé also loved it! I actually didn’t even have all the ingredients on hand, namely fish sauce, lime juice and cremini mushroom, but I just used regular baby bella mushrooms and followed the rest of the recipe and it came out wonderfully. I can only imagine how much better it will taste when I do have all the ingredients. We will definitely be adding this soup to our regular rotation!!!

So incredible! My husband said, ramen for dinner? And then couldn’t stop talking about how good it was. We have cooked with red curry paste before and know to use less than the recipe calls for for our tastes, so used only 1 tbsp and it was still the perfect spiciness. You can always add more, right?! I’m going to give this another try because the flavors are amazing! Despite your mention of adding the noodles at the end, it still came out a mushy mess. It’s more likely my fault because I let them sit for too long b4 serving. Seriously, DO NOT ADD THE NOODLES UNTIL YOU ARE READY TO EAT!? This is what I will do when I try this again:
1) Use only 1 and at maximum 2 blocks of noodles. If you use more, it’s more like a pasta dish, not a soup.
2) Cook the noodles separately and store the leftovers separately (as you do mention!) or your ramen will be mushy.
3) Use half the peanut butter, and add more to taste. I felt it was too much.
4) Thin with broth or water if too thick.
As I sai, the flavors are amazing, so thank you for the recipe – I can’t wait to get it right!

Super yummy. I had it the last two nights. I must say it was really spicy last night almost burn your lips off spicy. I wonder if I did not mix it well enough for tonight it was just right. Still may lay off the red paste. Maybe its just because we have such a large Asian influence up here and buying from the Asian market. You get the fresh stuff and it’s P to the O tent!

This is the first time I’ve ever commented on a recipe but it was that good! I made it in my one pot and it was outstanding. My husband and two teens loved it.I followed the recipe exactly except for two changes: I used regular mushrooms instead of cremini mushrooms and mushroom broth instead of chicken. The broth was so good. It’s now on our regular rotation list.

I felt I HAD to make a point of leaving a review of this ramen, because it’s DELICIOUS! I Find often with recipe reviews, there are tons of comments about how much everyone wants to make it and how good it looks, but less discussion about how the recipe actually turned out. We’ve made this dish 2 or 3 times now, in our Instant Pot as suggested, and each time, it has come out perfectly. It’s amazing for our long, cold eastern Canadian winter nights. It’s so flavourful and hearty enough to be a very filling meal all on it’s own. ! It’s one of the only make-at-home ramen recipes I’ve actually loved, recommended to others, and made more than once. We often use Udon noodles to mix things up. We also like to put the fresh lime juice in right before serving to preserve freshness.

I just recently got an instant pot. I’ve been having fun trying recipes. This one is one of the best so far!
I added onion, a jalapeño, and a bit of crushed red pepper because we like spicy foods. But otherwise stayed on the recipe.
Delicious, easy, quick. And perfect for a grey, rainy day like today.
My wife said it’s every bit as good as what we get at the local Thai place.

There is no way the prep times given on this recipe are accurate. They are misleading. All you have to do is add up cooking times and you are over not to mention having to easily double the prep time to get everything ready. Not a fast meal to make but well worth the effort if you have the time. Very tasty.

Made this for dinner last night. Couldn’t have been quicker or easier! Parts of my chicken came out slightly dry; maybe because I used 2 breasts that in total weighed about 1 1/4 lbs together instead of one large one. I topped mine with the peanuts and soft boiled eggs- they came out so delicious and professional looking! Hubby said “If I got this in a restaurant I’d be happy.” Hurray! Thanks again! I made this last night in my instant pot and my boyfriend raved that it was the BEST thing I’ve made (to date)!!! it was so easy to whip up, and full of flavor (and healthy to boot)! had some issues with the noodles, though. I cooked them separately but once they cooled down, they stuck in a giant clump (I used plain ol ‘rice noodles’). any suggestions to avoid this would be great! thanks for the hit recipe!

I’ve been looking for this recipe for soooo long!!! I dined at a restaurant that served curry Raman that tasted just like this! I am moving away soon and I was going to miss this dish so bad… so I was on the hunt for a curry Raman using peanut butter and coconut milk… THIS IS EXACTLY IT! I have to admit I was skeptical about the mix of so many strong flavours (peanut AND curry AND soy etc) but this turned out wonderfully. I used tofu instead of chicken and green curry paste instead of red as that’s what I had on hand, and as suggested, cooked the noodles separately so I can pack for lunches for the week. This is my first time cooking one of your recipes; I will obviously be back!

This recipe is on heavy rotation in my kitchen. It’s so simple and so delicious, and once you get the basics down, you can pretty much put whatever veggies you want in it. But honestly, as written, it’s perfect. The flavors are deep and powerful, and there are some really great textures happening here as well–the creaminess of the broth, the chewiness of the mushrooms, and the crunchiness of the peanuts!

My husband and I love Thai food and I’ve made many Thai dishes. We loved this recipe. He loves heat so he added Sriracha sauce to his bowl. I find prep is made easier by the convenient bottles of minced ginger and garlic. I also used Chinese egg noodles instead of ramen noodles. I might have put too many noodles in, so I’d cut back next time. Tomorrow night for dinner I’ll reheat with more broth, coconut milk, peanut butter, fish sauce, soy sauce and curry paste to get more liquid. This was delicious!

Here’s a prime “secret ingredient” I use to finish off my bowls of oriental noodle soups — diced Napa Cabbage. Cut out the center white part and chop the green leafy part, put in the bowl and pour the prepared, hot soup over it. The cabbage will stay relatively crispy while eating.

Delicious and easy. I did plus up the chili paste to the whole small jar of red chili. I used lite coconut milk. Added a bit of fresh corn and straw mushrooms. I cooked the noodles separate so that they wouldn’t absorb too much of the broth. Great recipe. Will make it again. Great Ramen base for any kind of ingredients

Despite my efforts to stuff up this dish (slight pressure cooker mishap resulted in some of it on my ceiling…). This was absolutely amazing, and other wise very simple to make. I think this will become a staple dinner at home, might just stick to the stove top version in the future!

So delicious! I would second the comment about the prep time not being accurate. If you can wash and chop 2 peppers, half a pound of mushrooms, a bunch of cilantro plus juice a lime, grate an inch of ginger, ginger and mince a clove of garlic in under 5 minutes, you are not the average cook! It took me more like 25-30 minutes for prep.

I’ve made this twice now and it’s AMAZING. I spent a few months in Thailand and I rarely can make something as good as what I had there. The second time I made it I used rice noodles and drumsticks instead of the ramen and chicken breasts, and it was delicious!

Wow! This recipe is amazing. I was intimidated by making my own ramen at home but this just completely proved me wrong. I had all the ingredients, except for the noodles which I found at Wal-Mart, and followed the recipe ingredients but I did add more noodles and 1 lb of chicken. It was so so good! I made this tonight for dinner exactly. I made it on the stove since I don’t have an instant pot. This was delicious. I am incredibly impressed. Next time I will do shrimp instead of chicken because I’m not a fan of boiled chicken and will add jalapeños as well as red peppers and shiitake mushrooms. Wasn’t sure if I commented the first time I made this but wanted to added my raves to everyone else’s. This recipe is exceptional. It’s one of the best recipes I have ever tried. This time I doubled the ingredients up to and including the garlic. I did the stovetop version and prepped on Sunday. On Monday I divided the broth and chicken/veggies into 10 servings (wanted more broth per serving) and froze 6 servings for later. To serve I reheated 2 servings of the broth/chicken/veggies and cooked my ramen noodles separately. I added the spinach, cilantro and lime to the pot and let the spinach wilt and the mixture heat through. I added a serving of cooked ramen to two bowls and added the broth/chicken/veggies over top. I found doing the prep the night before made this an easy weeknight meal for us. Cooking the ramen separately allowed us to have more of that lovely broth (I cooked the ramen about 30 seconds less than usual to still allow for some broth absorption). Already looking forward to leftovers tomorrow! Thanks again – your recipes are more and more becoming my go-to. They never disappoint.

We made this last night……… and we are making it again tonight! It was delicious and easy. I agree with some of the other comments that the prep time is certainly way off but definitely worth the wait. The ingredients aren’t things that most people have laying around so, since we have them all we are making it again. If you are like us and want some leftovers, I would recommend putting the noodles directly into the bowl your eating out of and THEN putting the soup on that. If you mix it all in the pot then you’ll have noodle-ly mush a half hour later.

I love this recipe. I’ve made it 5 times now. One suggestion is to only cook the noodles in the soup if you are going to eat it all right away. I use cheap-o ramen noodles and they get mushy real quick. I also dice the chicken and put it in the pot instead of shredding later…mostly out of laziness. If you forget the peanut butter, its still really good:)

Fairly labor intensive (for what I usually make). The flavor is good, and I think the dish would have improved with a thicker sauce (and probably shallots) and if I make it again, I would definitely add bean sprouts.

This looks delicious but I don’t like spicy food. Would it still taste good without the red curry paste or is there a substitute I can use? I did Google for a homemade paste to see what’s in it and I could make that, eliminating the chili peppers if that would be the best option.
Yes, this is not a curry. Don’t let the curry paste fool you. It’s just flavor, it’s not spicy and doesn’t taste like curry at all. Promise. Easy and delicious but our family could never tolerate the level of heat from 1/4 cup of red chili paste (we use Taste of Thai brand), so found about 2 teaspoons to be just right…nice heat in the back of the throat. I also used a dehydrated black mushroom simply tossing them into the pot which saved on prep time.

Fabulous recipe! I did the instapot version and the only two changes I made were extra chicken (2 breasts weighed just over 1 lb), and frozen spinach thrown in at the end with the noodles. The family loved it. Thank you ?

Peanut allergy! So I think I will substitute cashew butter, what do you think? I think it has the closest flavour/texture to peanuts and it is what I often substitute for peanuts in Thai recipes. But I am open to suggestions. (Allergy is just to peanuts so all other nuts are fine.)

I have never left a comment before but this ramen was delicious and deserves a review. I made it on the stovetop and it was done in 35 minutes. If you put all the liquids ingredients and the chicken in and prep the rest (takes 5 minutes) while it is simmering it can easily be on the table in 40 minutes (I am sure much faster in the instapot, I am too lazy to get mine out of the box!) I have never made a soup base with peanut butter and was skeptical but it was so so good. I wouldn’t change a thing, this recipe is a keeper!

We had this for dinner tonight and it was delicious. I made it on the stove top because I had some leftover roast chicken. I had arugula and used that in place of the spinach, it worked out great. It was a great way to use leftover chicken because it totally changed up the flavor of what we had had the night before. Thanks for a great recipe.

I made this tonight and followed the recipe exactly. I really don’t like how it tastes. It is just so salty and fishy tasting. I’m so sad! Thai food is my favorite cuisine by far, and I wanted to love this. After eating a bowl of it, I tried adding more chicken broth, coconut milk, peanut butter, and honey to the soup pot to counteract the other overpowering flavors, but I’m still not a fan. I’m not sure I’ll make this again, since it took me quite a bit longer than 30 minutes to make, but if I do I would reduce the soy sauce and skip the fish sauce.

I have made the Thai chicken ramen soup many times, making it again this Sunday. Delish!!! I add a Thai bird chili(just make a slash in the chili and pop it in the soup, remove before serving) we like it a bit spicier. Best fall/winter soup Ever!!

Yum! This was delicious, my first attempt at homemade Ramen and I couldn’t be happier! I love Asian cuisine and this was the perfect ramen fusion. I’m a Trader Joe’s shopper on a budget, so I did make the following tweaks according to what they had in store and what’s in my wallet to make sure I could use ingredients in multiple ways.
I used ground spicy pork sausage instead of chicken which I browned in the soup pot (and left the excess oil/deliciousness on the bottom of the pan for extra flavor). TJ’s Red Curry Sauce instead of paste. And honey peanut butter, which I had at home. I also through in chives and cut back on the mushrooms. TJ’s didn’t have ramen noodles, so I stopped at the convenience store next store and bought Top Ramen for the noodles.
My rookie move: I DIDN’T separate the noodles and the fact they were cheapo ramen noodles didn’t make this fumble any better there a solid amount of mush in the pot! Before putting the soup in the fridge I separated the noodles from the broth the best I could and made additional broth for the plethora of noodles.
I am sooooooo excited to eat this for lunch tomorrow, and make it again in the near future – with real ramen noodles!

Made this a few nights ago and my whole family loved it – way better than any takeout we could get here! So 5 stars for the flavor. I did just have a couple remarks, I made it in my instant pot, and at 10 minutes my red peppers had turned to complete mush and dissolved into the broth. There were just little red globs where the peppers were once nice and firm. It also took a full 30 minutes to come to pressure, and I had been so excited about the quick cook time, Needless to say, I will be making it on the stovetop next time! So, perhaps add that extra time into the cook time listed, lest someone else fall into the same trap? Regardless, it was super delicious and i will definitely be making it again 🙂

Hello! Huge HBH fan over here! I just got an instant pot and the preheating is throwing me off. I’ve had it on for 30 minutes now and it still is not done preheating. How long does it typically take for yours? It seems that realistically this recipe is going to more around and hour to an hour half by the time or preheats, cooks and then releases the steam? Or is there something I’m missing? Thanks for sharing your genius!

Made this for our cozy New Year’s Eve dinner on a chilly Colorado night. Because I changed dinner plans last minute and didn’t want to go to the store, I made it with beef broth and shaved flank steak. Also used shredded kale instead of spinach. It was the perfect dinner to enjoy with my husband and two daughters as we reflected on the year behind us and look towards the new one ahead. I made this ramen last night and it was DELICIOUS. It took me a little more than 30 minutes, I assume I did not work as expeditiously as a seasoned chef, but it was absolutely worth it. I ended up adding a soft boiled egg on top which made it SO rich and delicious and made it taste like restaurant quality ramen. I did omit the peanut garnish but it was still phenomenal and full of pleasing textures. I love basil and cilantro, so the top was full of herb garnishes, as well as lime garnishes. I cannot wait to eat the leftovers – this recipe makes a TON! I will have at least 4 more servings of this after eating 2 when I initially cooked it.

I was skeptical of the peanut butter but this tastes great! I would put the noodles in for less than 5 minutes to keep them from getting mushy. Everything else was great. Definitely use low-sodium soy sauce since I didn’t & it was a tish salty. Tastes just as good with basil instead of cilantro too!

This is very good, but having made it in the pressure cooker the first time, I will no longer use that option. 10 minutes turns the peppers and mushrooms into complete mush, and since the soup doesn’t require a long cooking time to begin with, it just doesn’t make sense to use a pressure cooker. Next time I make it, I will cook everything but the veggies for a while to meld the flavors, and then put them in for a few minutes at the end until they are cooked to a better consistency. (Frankly, in the time it takes to get the soup to pressure and cook it, it would be done via normal stovetop, maybe even faster.) Lots of flavor in this one, though!

Have been looking fora good coconut milk ramen recipe.. was hesitant to try this cause im not big on peanut flavors. I was so surprised! Its got depth, and so much flavor. The peanut butter isnt that strong, and it is the right amount of salty. I didnt use the bell peppers and added more mushrooms. I also trippled the garlic- using only 1 clove in any recipe is never enough for me. Also added some sriracha for heat.

Just made this for dinner. It was delish!! I love Thai food and trying various recipes. I doubled the lime, added chili garlic sauce to make it spicy, and used spinach and cabbage that I had in fridge. Also, used rice noodles cause I didn’t have ramen. I just wanted to drop in to say I have made this recipe countless times. It is SO FLAVORFUL and SO EASY! I also make this for my elderly dad and drop it off for him during this quarantine time and it’s one of his favorite dishes and can serve as many meals for him.. Y’ALL. I am not EVEN playin’, this recipe is freaking AMAZING. Holy smokes! The only thing I changed was that I used frozen boneless, skinless chicken thighs–so I pressure cooked it a little longer @14min. PERFECTION. I cannot stop drinking the broth. This is very good recipe. I used rice noodles instead of ramen and it was delicious. Especially the sauce was perfect, no need for additional seasoning! One thing I would change though is adding the peppers in last together with the spinach, lime juice and cilantro so they would keep their crunch, otherwise they’re kind of soggy. But overall this is a keeper! Thank you!

Firstly, this is an amazing popular recipe that’s now a staple in our household, I’m actually missing eating it while pregnant (babies very particular!). My husband has never been a fan of soups – but LOVES this dish, he has recieved many compliments on the smell at work for leftovers!! Sjmo simple to just throw all the ingredients in our slow cooker on low for the day! We usually swap between noodles and rice, just for a variety. Ive noticed you mentioned it could be frozen after being cooked (omitting noodles) but do you think it would work to freeze all the ingredients (omitting noodles) BEFORE cooking? Then can whack it in the slow cooker 🙂

5 Stars!!! Being that I battle high blood pressure I used No Salt Added Chicken Broth, Coconut Aminos in place of soy sauce, 1/2 of the amount of Fish Sauce and 2/3 of the amount of the red curry paste. I also used the healthier rice ramen noodles from Costco. I would definitely warm the noodles separately as the leftovers will be way better separated. Thanks for the great recipe.

Girl! This is my third recipe of yours in a week! Today was rainy in Toronto so ramen seemed like a good idea and I needed to use up my red curry paste. I didn’t use mushrooms or fish sauce, and I substituted spinach for bok choy, which I accidentally added to pressure cook but no biggie. It was absolutely scrumptious! My fiancé and I went back for seconds. So happy I don’t need to cook tomorrow. Another winner!

I made this and it tasted good but for all the ingredients added I felt like it tasted exactly like regular curry and it was creamy not watery like the picture ( I used exactly the same measurement and regular coconut milk ). Can I skip the coconut milk next time ?

This. Is. AMAZING. In my instant pot, I sautéed the garlic and ginger first and then the chicken breast and veggies. And then pressure cooked everything else except the spinach and cilantro. And wow. Definitely a keeper!! The ramen noodles take it to another level!

This was so good and so easy! I agree with an earlier commenter that it took me longer to prepare but that’s pretty common and I usually double total recipe time anyway…I must be a slow chopper :). Planning for an hour is about right. I cooked the noodles separately since I’m only cooking for myself and will have delicious leftovers for days. I didn’t have fish sauce so skipped it and it was still delicious. Adding a hard boiled agg would be good too, might have to try that tomorrow. This will be a new staple in the cold weather food rotation!

We made it on the stove top, sauteed the vegetables before adding the liquids and marinated (lime zest + soy sauce) and grilled the chicken before cutting it into stripes and adding it to the rest…just DELICIOUS. Going to make this again and again this autumn/winter, THANK YOU for the recipe!!!

Restaurant quality, easy, and fast! I substituted zucchini for mushrooms because my partner doesn’t like them (and we have so many in the garden!). I also added about a cup more broth, and doubled the curry paste for more spice. Will definitely make again!

This recipe is *easy* and *delicious* … my boyfriend’s comments – “wow.” “are you sure you made this?”, “this is restaurant quality”, and “this is the best meal you’ve ever made me”. We added about 1TBSP of sriracha before pressure cooking, and another 1TBSP when we added the noodles, and another drizzle over top when serving because we like a little kick, and honestly, we could probably stand dialing up the heat a little bit more. Also used kale instead of spinach (that’s what I had) and it was *really* good, and even healthier!! I’ll definitely be making at least 100 more times (probably more, tbh). This is the BEST thing I have ever made. We cooked the noodles separately (2 top ramen squares), drained them and then put them back into the hot pan and mixed in two raw eggs + a little butter. I made this tonight and was so delicious. I only put in a tablespoon of Thai chili paste because i knew it was going to be too spicy for a my husband and kids. So I poured a cup of whole milk with a 1/4 cup of coconut butter. That seemed to have done the trick. Thank you for sharing.

I just finished my lunchtime leftover bowl from last nights dinner. OMG – this was seriously delicious. We didn’t have mushrooms, so I skipped those, but had everything else on hand. It was really quick to put together (I chopped the bell peppers earlier in the day so I could just dump them in) and super simple. It was so flavorful, my husband actually licked the bowl. Even my 8-year old liked it (but not the super-picky 10-year old- can’t win ’em all.) Out of the dozens of your recipes I’ve made, this is our favorite savory dish. I think next time, I’ll double the spinach, but that’s just personal preference. I see more of these delicious noodles in our near future.

This was SO good. It was even better as leftovers with fresh noodles added while it was being heated up. The flavors are really perfect. My partner was skeptical about several aspects of the recipe/ingredients, once he tried it he said he’d just eat the broth plain if he could, it was that tasty. Will definitely make many more times and might try with deep fried tofu pieces next time.

I make pretty much all of your Asian meals regularly but this is my current favorite! So many of these meals are easily adapted to my keto lifestyle! I feel like I don’t have to sacrifice anything on this diet with these recipes! I sub miracle noodles for ramen, omit honey and sometimes add a bit of allulose in it’s place, use a natural creamy peanut butter and the rest is already low carb! I’ve lost 30 lbs in 4 months and I don’t know if I could’ve stuck to my diet without these wonderful recipes (especially this one!).

So, my grocery store didn’t have red curry paste… I grabbed Thai Kitchen’s Roasted Red Chili paste (that was sitting right next to the Green Curry Paste) instead. Will this work as a substitute? Need to adjust portion? Do I need to wait until I can get my hands on some red curry paste?

WOW. A total hit with my family. We managed 5 servings. I did without the mushrooms (dad’s not a fan) and added about triple the garlic and ginger because we are huge consumers of both and like a lot in our dishes. Absolutely making again. The flavor was on point and perfect for a cold night. I cooked the noodles separate for leftovers, but there were no leftovers to be had! All toppings are a must. We also added green onion. Made it, loved it! To battle the soggy noodles I just cooked them separate then put them into the bowls and poured the soup on top (it’s how they do it in ramen restaurants in Japan) … tada!

Good recipe. Calories way off (this seems to be an ongoing issue). My Fitness Pal had it over 320 and that didn’t include the noodles which is at least another 100-200.

The flavor of this recipe is very good! I added gluten free noodles made of rice and corn cooking them on saute after the pressure cooking step. I cooked them in the soup juice. I had to stir them every few min so it did burn on the bottom. It actually turned out as a creamy sauce in stead of soup because of the starch in the noodles. It was actually quite good!

I love half baked harvest but this recipe was a flop. I don’t know where I went wrong because I followed the recipe exactly. I ended up with melty peanut butter ramen noodles. For some reason my broth was super thick and tasted overwhelmingly of peanut butter. I added the ramen noodles after cooking them but they still aborted all of the broth in the bowls and it was just really soggy ramen. Maybe some lemon grass would have changed the flavor and less peanut butter. I’m thinking rice vermicelli noodles would have been better. Probably won’t make again.

This turned out ok. I loved the idea of the convenience of using the instant pot for this recipe. the chicken turned out tender and juicy and shredded easily. The red peppers, on the other hand were way overcooked in the instant pot. All that was left of them were skins… I was also not crazy about the peanut, red curry sauce. Maybe I’m just more of a ramen purist, but I prefer a more traditional broth. The peanut butter in a broth just threw me a bit and felt out of place.

The first time I made this it was a disaster! Things I learned:
* you MUST use ramen noodles, Japanese udon etc won’t do and will become mush.
* do NOT put the noodles straight in the broth. Cook the broth down so it’s a little thicker, and cook the noodles separately. Pour the broth over the noodles as you would with traditional ramen.
* ground chicken and pork are not a workable replacement, no matter how much you like them in Dan Dan and Tantanmen.
* marinate your meat and cook separately as well (the second time around I sliced pork thin and marinated for a couple of hours in garlic, soy sauce, fish sauce, sugar, and lime). This allows for more flavorful cooking and nice presentation.
This makes an absolutely delicious broth but I would not recommend it as a one pot meal.

Really good! Kids enjoyed it as well. Stovetop version. I used what I had which was Thai yellow curry paste, bok choy and peppers that were on their last legs, and fine vermicelli rice noodles, otherwise followed the recipe. Finished with black sesame seeds and spicy chili oil on mine. I would put this on our family rotation:)

This has become a family favorite and is in our regular rotation! I cook the ramen noodles and leave them out separately so everyone controls how much they want and keeps it from becoming too mushy when heating leftovers later. Literally obsessed with this recipe!!! The curry/lime/peanut combo tastes incredible and these recipe’s instructions are super simple and easy to follow. Totally recommend! My husband and I LOVE it, and we’ve even put our own spin on it! We started using veggie broth and tofu instead of chicken broth and chicken, and it tastes amazing both ways! New favorite go-to dinner for weeknights AND date nights!! 🙂

FYI – pressure cookers have to build up pressure before they even begin cooking. This process takes about 15 minutes… THEN it’ll start cooking the chicken making it a total of 25 minutes of cook time in the pressure cooker.

So easy and so delicious!! I added slightly more chicken since I did not want to waste what I had and I add a little more mushrooms. Overall it was so delicious and I am so glad I made it! The peanuts added on top really pull it all together. For the garlic and ginger I just used the minced garlic that comes in a jar and I used the tube of grated ginger you can buy at the store since I have never bought fresh ginger before. It was still amazing!!

Love this dish. Somehow I’ve ended up making this after every sledding day, when we come into the house freezing cold, hungry and tired. This dish is so easy, so reliable, so quick (I do it on the stove top, and I do the noodles separately so any leftovers don’t turn to mush) and one hundred percent tasty. Another great ramen recipe! I only made it because I had a lot of baby spinach left over from the ramen (yours) I made last week and was happy I did. Our supermarket was out of cremini mushrooms so used button mushrooms, which were fine. I also boiled the soup when I put the noodles in (like I did last time) because I just think they cook better that way. Topped the bowls with chopped peanuts and toasted sesame oil, the perfect finishing touch.

This was AMAZING! I am super picky on anything Thai—cause I crave for it to taste authentic. This is literally the best Ramen I’ve ever had. I added a little bit of cornstarch to thicken it and make it a bit creamier, and a dash of sesame oil. It was perfection. So rich and flavorful. My whole family really loved this dish!we also topped with toasted sesame seeds and I added basil and cilantro. To cook the noodles I put them in a colander in the pot with the soup base and was able to quickly and easily separate them, I had to cook the noodles in 2 batches.
I really need to go to an Asian food market to get bulk items of curry, noodles etc, we have loved all the thai and other Asian dishes we have made from Half baked harvest so it would be nice to have the ingredients be more cost efficient!

This is amazing! I made mine with cubed firm tofu. My sauce is thicker than a ‘soup’ so next time I think I might increase the veggies, omit the ramen and serve it over rice. It made 4 meals for me as is, which is great for meal prep.

This is my favorite ramen recipe. I love making it in a big batch and then freezing some for later (just wait to add the noodles, lime juice and cilantro for after you defrost it). I also double up on the broth because I love the flavor and I find the recipe as-is is more generous on the fillings/toppings than I like from a texture perspective (that’s just me). So yummy.

I love this recipe! I have made it multiple times and find myself craving it. Would recommend this for many different dietary needs as well. I have made a vegetarian version with veggie broth instead of chicken broth and crispy tofu instead of chicken. Was also so delicious!
